Millbrook Mercantile April Cheese of the Month Club
With winter refusing to ever end our thoughts turn to warm, sunny places we wish we could be in. With that in mind, April’s cheese selections are a homage to the ancient world of Greece, and their wondrous culinary offerings that are sure to please.
Both cheeses are a blend of sheep, goat & cow’s milk so these cheeses are easier to digest for those that have lactose or other digestive sensitivities. The first is Bernadette’s legendary marinated Macedonian Feta cheese with candied citrus peel, oregano, chili flakes and EVO.
The second cheese is called Kafelograviera, and is often regarded as one of the 5 finest cheeses in the world by professional turofiles. This is the cheese used in Greek restaurants for the flaming cheese dish called Saganaki. We are going to provide a link for a video on how to safely make Saganki at home.
In addition to the staff’s cheese selections for this month, your cheese box will include a Dolmades (classic Greek appetizer of grape leaves stuffed with rice & onion), and Kalamata Olives from Corfu. We are including a shot of brandy so you can make your own Saganaki at home.
Every month we bring in new and exciting white & red wines that we feel would pair wonderfully with the cheeses our staff have selected. With this philosophy in mind, we have selected two unique wines that pair wonderfully with this month’s cheese selections
The white is a summer favorite called Albariño, not well known in North America, but beloved in Europe for its light, refreshing drinkability. From winemaker Marieta, from the Galacia region of Spain, this bright, fun wine has high-toned floral notes and well-defined apple, pear, apricot, peach, melon, and orange citrus. A wine built for seafood or vegetarian sushi. Score – 95
The red selection is big bold blended French GSM (Syrah 85% Grenache 12%, Mourvèdre 3%) from winemaker Chateau Paul Mas Clos Des Mûres of the Languedoc region. Raspberry tart and baked black plum mix with rhubarb and dried red currant on the nose. Generous fruit and lead shavings of number 2 pencil lead on the palate. Score - 94
