• Greek Layered Hummus dip☀️

This dip is so easy and delicious 👏

Perfect appetizer for company

Ingredients

1 (17-ounce) container prepared hummus

1 ½ cups plain Greek yogurt

½ cup (¼-inch) English cucumber pieces

¼ cup chopped roasted red peppers

¼ cup pitted kalamata olives, chopped

¼ cup red onion, diced

1 tablespoon Medium to Robust EVOO, plus extra for drizzling

1 tablespoon fresh chopped parsley leaves

¼ teaspoon salt

½ teaspoon fresh ground black pepper

1 ounce crumbled feta cheese

2 tablespoons toasted pine nuts

(I made this without the Onions and Olives and it was still a big hit)

Serving suggestions:

pita bread, pita wedges or baked pita chips

cucumber slices

carrots

celery

crackers

use as a spread on sandwiches

Instructions

Spread the hummus on a shallow serving tray or plate. Dollop the yogurt on top, then carefully spread to cover the hummus, leaving a border showing through.

In a small bowl combine the cucumber, peppers, olives, onion, 1 tablespoon olive oil, parsley, salt and pepper. Spoon the vegetable mixture evenly over the yogurt. Sprinkle crumbled feta cheese over the vegetables then top with toasted pine nuts. Drizzle the dip with a little extra olive oil. Serve immediately.

A favourite one for us is

1/4 cup low sodium soy sauce
1/4 maple syrup
Juice from half a lime
Pepper to taste

Salmon Recipes (6 Ways) 🐟
Six delicious salmon recipes — perfect for quick weeknight dinners or special occasions.

Default: Prep: 5–10 min | Cook: 8–15 min | Servings: 4

1️⃣ Garlic Butter Salmon
Prep: 5 min | Cook: 8–9 min

Ingredients:

4 salmon fillets

3 tbsp butter

4 garlic cloves, minced

1 tsp salt

½ tsp black pepper

Lemon slices

Instructions:

Season salmon with salt and pepper.

Heat butter in a skillet over medium heat.

Add garlic and cook 30 seconds.

Place salmon skin-side down and cook 4–5 minutes.

Flip and cook another 3–4 minutes.

Serve with lemon slices.

2️⃣ Honey Garlic Salmon 🍯
Prep: 5 min | Cook: 8–10 min

Ingredients:

4 salmon fillets

¼ cup honey

3 tbsp soy sauce

4 garlic cloves, minced

1 tbsp lemon juice

Instructions:

Mix honey, soy sauce, garlic, and lemon juice.

Heat skillet and add salmon.

Cook 4 minutes per side.

Pour sauce into pan.

Simmer until glaze thickens.

Spoon glaze over salmon and serve.

3️⃣ Baked Lemon Herb Salmon 🍋
Prep: 5 min | Bake: 12–15 min at 200°C (400°F)

Ingredients:

4 salmon fillets

2 tbsp olive oil

2 tbsp lemon juice

1 tsp parsley

½ tsp garlic powder

Instructions:

Preheat oven to 400°F (200°C).

Place salmon on baking tray.

Brush with olive oil and lemon juice.

Sprinkle herbs and garlic powder.

Bake 12–15 minutes.

Serve hot.

4️⃣ Teriyaki Salmon 🥢
Prep: 10 min | Marinate: 15 min | Cook: 8–10 min

Ingredients:

4 salmon fillets

¼ cup soy sauce

3 tbsp honey

1 tbsp mirin

1 tbsp rice vinegar

1 tsp ginger

Instructions:

Mix sauce ingredients.

Marinate salmon for 15 minutes.

Cook salmon in skillet 4 minutes each side.

Add remaining marinade to pan.

Simmer until thick.

Coat salmon with sauce.

1️⃣ Honey Garlic Chicken Marinade

Ingredients:

⅓ cup (80ml) soy sauce

¼ cup (85g) honey

4 cloves (20g) garlic, minced

2 tbsp (30ml) olive oil

1 tbsp (15ml) rice vinegar

½ tsp (2g) black pepper

½ tsp (3g) salt

1 kg (2.2 lb) boneless chicken

Instructions:

In a bowl, mix soy sauce, honey, garlic, olive oil, and vinegar.

Add black pepper and salt.

Pour marinade over chicken and mix well.

Marinate for at least 2–4 hours (overnight for best flavor).

Cook by grilling, baking, or pan-frying until done.

2️⃣ Lemon Herb Chicken Marinade

Ingredients:

¼ cup (60ml) lemon juice

3 tbsp (45ml) olive oil

3 cloves (15g) garlic, minced

1 tsp (1g) dried oregano

1 tsp (1g) dried thyme

½ tsp (2g) black pepper

1 tsp (5g) salt

1 kg (2.2 lb) boneless chicken

Instructions:

Combine lemon juice, olive oil, and garlic.

Add oregano, thyme, pepper, and salt.

Mix well and coat chicken evenly.

Marinate for 2–4 hours.

Cook by grilling or baking until juicy.

3️⃣ BBQ Chicken Marinade

Ingredients:

½ cup (120g) BBQ sauce

2 tbsp (30ml) soy sauce

2 tbsp (30ml) olive oil

2 tbsp (25g) brown sugar

1 tsp (3g) garlic powder

1 tsp (3g) onion powder

½ tsp (2g) black pepper

1 kg (2.2 lb) boneless chicken

Instructions:

Mix BBQ sauce, soy sauce, olive oil, and brown sugar.

Add garlic powder, onion powder, and pepper.

Coat chicken thoroughly with marinade.

Marinate for at least 2–6 hours.

Grill or bake until caramelized and cooked.

4️⃣ Spicy Yogurt Chicken Marinade

Ingredients:

½ cup (120g) plain yogurt

2 tbsp (30ml) lemon juice

1 tbsp (15g) garlic paste

1 tsp (2g) paprika

1 tsp (2g) red chili powder
