Fresh Cherry Phyllo Strudel
Ingredients
1 pack phyllo dough, thawed
3–4 cups fresh cherries, pitted (can halve some for texture)
½ cup sugar
2 T cornstarch (to thicken juices)
Zest of 1 lemon + 1 tbsp juice
1 tsp vanilla extract
½ tsp cinnamon
½ cup melted butter
Powdered sugar, for dusting

Method
Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
Mix cherries, sugar, cornstarch, lemon zest/juice, vanilla, and cinnamon in a bowl. Let sit a few minutes.
Lay down 6–8 phyllo sheets, brushing each lightly with butter. Keep unused sheets covered with a towel to prevent drying.
Spoon cherry filling down the center in a log shape.
Fold sides over, then roll into a strudel. Place seam-side down on the baking sheet. Brush top with butter.
Cut a few small slits on top for steam.
Bake 35–40 minutes until phyllo is golden and crisp.
Cool slightly, dust with powdered sugar, slice, and serve with whipped cream or vanilla ice cream.

Charred Alberta Corn (Esquites Style)
Esquites is basically Mexican street corn off the cob. Creamy, tangy, a little smoky, with the sweet crunch of charred corn in every bite.
Pile it all into a warm tortilla, have it with tortilla chips or literally eat it with a spoon. It tastes like peak Alberta summer with a little Mexican inspiration.

1 cob of corn - grill until you get some blackened spots. Then cut it off the cob.
Mix with:
½ jalapeño, finely diced
¼ cup red onion, finely diced
¼ cup chopped cilantro
1 T lime juice
2 tbsp olive oil
Salt
¼ cup crumbled cotija or feta
2 T mayo
2 T sour cream
I tsp smoked paprika
½ tsp Tajín
