Ingredients
1 cup Mountain Path Organic Red Quinoa
4 large bell peppers, halved and seeded
1 tbsp olive oil
Β½ onion, diced
2 cloves garlic, minced
1 cup black beans, drained and rinsed
1 cup corn
1 cup diced tomatoes
1 tsp ground cumin
Β½ tsp smoked paprika
Β½ tsp chili powder
Salt and black pepper, to taste
1 cup shredded cheddar or mozzarella
Fresh cilantro, for garnish
Lime wedges, for serving

Directions
Cook the red quinoa according to package directions.
Preheat oven to 375Β°F (190Β°C).
Heat olive oil in a skillet and sautΓ© the onion and garlic until softened.
Stir in the cooked quinoa, black beans, corn, tomatoes, cumin, paprika, chili powder, salt, and pepper.
