Coho salmon is in for the first time this year!
Fresh salmon roe is also in for the first time （$17.95/lb）!

Here's a simple recipe:

Cleaning: Gently rinse the fresh roe in warm water (around 158°F) with 3% salt, continuously stirring until all blood membranes and slime are removed.

Curing: Mix the plump roe with a bit of salt, sake, and soy sauce. Wrap and chill in the fridge for 1 day, then drain the liquid.

Then you can place the delicious homemade salmon roe over rice to make your own salmon roe sushi or wrap it with nori, and enjoy!😋
