So when you have a bit of a tidy-up in your cold store, sometimes you find a piece of cheese that’s been forgotten on a shelf… and that’s exactly what happened… so I found a 6-year-old goat’s milk cheddar… and it’s really good… mild with a slightly sweet flavour
