Fed on the island's famous Rishiri Kombu, one of Japan's most celebrated kelps, the uni develops a refined umami and natural sweetness that has made Rishiri one of Japan's most respected sea urchin-producing regions.
Available only during the short summer season, with harvests heavily dependent on weather and sea conditions.
