Don’t even think about picking those tomatoes without trying this basil and peach combo.

This recipe is one that our customers know well (and can’t live without). Basil Olive Oil paired with Peach White Balsamic makes this recipe taste like summer and just pure happiness. Trust us! ✨

Heirloom Tomato, Peach and Burrata Salad

Prep: 15 minutes
Makes: 4–6 servings

Ingredients:

Salad:
    •    3 large Heirloom tomatoes, preferably in different colours
    •    1-2 peaches
    •    A handful of colourful cherry tomatoes
    •    Burrata Cheese
    •    2 tbsp crushed walnuts
    •    Flaked Sea Salt
    •    Coarse black ground pepper

Dressing:
    •    1/4 cup Della Terra Peach White Balsamic
    •    1/3 cup Della Terra Basil Extra Virgin Olive Oil

Garnish:
    •    Fresh Basil Leaves
    •    Fresh Oregano
    •    Fresh Thyme

Method:
    1. Slice heirloom tomatoes, and peaches and arrange on a platter.
    2. Slice cherry tomatoes in halves and some in quarters for different levels of texture and add to the platter.
    3. Open up the ball of burrata cheese and arrange it on the platter in random locations.
    4    Sprinkle crushed walnuts over the salad and add a couple of pinches of flaked salt and black ground pepper over the salad.
    5. In a small jar, combine oil and white balsamic to combine.
    6. Garnish salad with fresh basil, oregano, and thyme.
    7. Drizzle salad with the dressing and serve with rustic Calabrese bread.
