We finished it with housemade 9 Mile Legacy Brewing Angus Stout pickled onions, and beer mustard mayo using Gravelbourg Mustard Beer Mustard and a handful of fresh arugula!

It's always a pleasure to welcome this gem back to the shop, 1608 de Charlevoix from in Quebec 🇨🇦🧀 This semi-firm cheese is made with thermized cow's milk from the heritage breed, Vache Canadienne. Uniquely Canadian, this breed first arrived with the French in 1608. Typically aged for 3-6 months, it will develop a pinkish rind with a golden paste. Creamy, nutty, fruity, with a subtle farmy note. This is the perfect snacking cheese! It is also a great melter! Perfect for an upscaled grilled cheese, fondue, or raclette.
