Oxtail and Osso Buco - two luxurious bone-in cuts rich in marrow, collagen and flavour. So which one should you choose?

TEXTURE AND FLAVOUR
🔪Osso Buco is milder and more delicate. The meat stays a touch firmer. Its star feature = buttery marrow from the bone.
🔪Oxtail is much richer and beefier. The meat and collagen melt and meld into a silky, sticky texture while slow-cooking.

COOKING
🔪Osso buco is great for an elegant meal with a neat presentation - think, served over risotto or a traditional italian dish.
🔪Oxtail is perfect for hearty stews & soups, caribbean style braises, or served over mashed potatoes, polenta or rice.
