RECIPE OF THE DAY!

Baked Parmesan Crusted Tilapia

This quick and easy oven-baked meal transforms mild fish into a crispy, flavorful dinner that requires minimal prep. Plus, it bakes up on a single sheet pan in under 20 minutes for a stress-free weeknight cleanup!

What You Need :
4 tilapia fillets (or any mild white fish you prefer)
1 cup grated Parmesan cheese
1 cup breadcrumbs
1 tsp garlic powder
Salt and pepper (to taste)
Optional: Fresh lemon juice

How to Make It :
Preheat and Prep: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper so your fillets don't stick.
Mix the Coating: In a medium mixing bowl, toss together the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper until well combined.
Prep the Fish: Lay the tilapia fillets flat on your prepared baking sheet. (Note: If you want to make this a one-pan meal, toss some quick-cooking veggies like asparagus or green beans right onto the baking sheet with the fish!)
Crust the Fillets: Generously press the dry Parmesan and breadcrumb mixture directly onto the top of each tilapia fillet to form an even crust.
Bake: Place the baking sheet in the oven and bake for 15 to 20 minutes. You will know it is done when the crust is beautifully golden brown and the fish is opaque and flakes easily with a fork.
Serve: Add a quick squeeze of fresh lemon juice over the top for extra flavor, and serve hot!
Serving Tip: This savory, crunchy fish is incredibly versatile! It pairs perfectly with a scoop of fluffy rice or creamy mashed potatoes, alongside a simple green salad to round out the meal. See less

Creamy Crab and Shrimp Seafood Bisque 🦀🍤

Ingredients:
1 lb shrimp, peeled and deveined
1 cup lump crab meat, picked over for shells
1/2 cup butter
1 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup carrots, grated
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups seafood stock (or chicken broth)
1 cup heavy cream
1 tsp Old Bay seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh lemon juice
Fresh parsley, chopped (for garnish)

Directions:
Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and grated carrots. Sauté for about 5-7 minutes until the vegetables are soft. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Make the Roux: Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for an additional 2-3 minutes, stirring constantly, to create a roux.
Add Stock and Seasoning: Gradually pour in the seafood stock, stirring to prevent lumps. Add the Old Bay seasoning, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing it to thicken slightly.
Stir in Cream and Seafood: Reduce the heat to low and stir in the heavy cream. Add the shrimp and crab meat, cooking for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
Finish and Serve: Stir in the fresh lemon juice and adjust seasoning if needed. Ladle the bisque into bowls and garnish with chopped parsley. Serve hot with crusty bread or crackers.
