Lapas. Limpets. The little conical shells that cling to volcanic rock along the Azorean coast. They’re pried off by hand, at low tide, by people who know exactly which rocks to work. Then packed on ice and flown straight here. Ponta Delgada to Toronto.
The taste is somewhere between a scallop and a clam, but cleaner, sweet, briny, unmistakably Atlantic. In the Azores they’re grilled right in the shell on a screaming hot plancha, hit with garlic butter, a squeeze of lemon and a little piri-piri if that’s your thing. Four minutes, start to finish and bread to mop the shells.
This is petisco food. Standing-around-the-grill food. The kind of thing that turns a Saturday into an occasion without anyone planning it.
