Braised chuck roast
How to get this results?…..
Season and sear a 3–4 lb chuck roast until deeply browned. Remove, then cook onion, carrot, celery, and garlic in the same pot. Add tomato paste, deglaze with red wine, then pour in beef stock with rosemary, thyme, and bay leaves.
Return the roast, cover, and braise at 300°F for 3.5–4 hours until fork-tender. Rest briefly, then slice and serve with the braising juices spooned over top.
