Antipasto Pizza
Instructions:
1. Remove the frozen dough balls from the package and place them on a lightly floured tray, leaving space between each. Cover with a clean kitchen towel and allow to thaw and rise at room temperature for 8 to 12 hours, or until doubled in size.
2. Preheat the oven to 500°F (260°C), or as hot as your oven allows, for at least 30 minutes. If using a pizza stone, place it in the oven while it preheats.
3. Dust your work surface generously with semolina flour. Gently transfer one dough ball onto the semolina and lightly dust the top with flour. Pre-bake the dough for approximately 5 minutes.
4. Dust your work surface with semolina flour. Gently stretch each dough ball by hand into a 12–14-inch circle. Hand-stretch the dough to preserve its light, airy texture. Transfer to a pizza stone dusted with semolina flour or a lightly oiled baking tray. Transfer the stretched dough to a pizza peel lightly dusted with semolina flour. If not using a pizza stone, place the dough on a lightly oiled baking tray.
5. Evenly divide the pizza sauce and toppings between both pizzas, leaving about 1 inch around the edge for the crust.
6. Bake for 10 to 14 minutes, or until the crust is golden and the cheese is melted and bubbling.
Let the pizzas rest for 2 minutes before slicing and serving.

Pasta with Tuna & Olives
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta, following the package instructions. Reserve one cup of pasta water before draining. Meanwhile, in a large pasta bowl, gently break apart the tuna fillets in olive oil.
2. In a small frying pan or saucepan, heat the extra virgin olive oil over medium heat. Add the garlic and anchovy extract, and cook, stirring, until fragrant. Remove from the heat and pour the mixture over the tuna. Add the parsley and mix until well combined.
3. Add the Mediterranean pasta sauce to the pan and heat through. Season to taste with salt, black pepper.
4. Add the drained pasta to the bowl with the tuna, along with 2 tablespoons of the reserved pasta water. Pour in the sauce and Ligurian Taggiasca olives, then toss until everything is evenly coated.
5. Finish with a sprinkle of chopped parsley, freshly ground black pepper, and freshly grated Parmigiano Reggiano cheese before serving.
