Giovacco is a rich, soft-ripened Italian cow’s milk cheese from the Friuli Venezia Giulia region. It gets its unique name from its creator, a cheesemaker named Gioacchino (Gio), and the cow’s milk (vacco) used to make it.
Soft, spreadable, and ultra-creamy. Over 40 days of aging, the cheese undergoes centripetal ripening, causing the paste just beneath the rind to become delightfully molten.Fresh, sweet, and delicately buttery with a clean, slightly tangy finish. Italian favourite!
