The journey from the volcanic soils of our Upala farms to the finished bar is a story of precision, passion, and terroir. We invite you to step inside our Brasilito factory and transition from a chocolate lover to a true connoisseur.

We have curated three distinct pathways for you to explore the world of fine Costa Rican cacao:

1. Discovering Chocolate Workshop
The ultimate sensory calibration. In this 60-minute session, you will trace the evolution of flavor, tasting cacao at every stage, from the fresh, tropical juice of the fruit to the roasted nibs and our finished single-origin bars. It is the perfect introduction to the complexity of craft chocolate.

2. Chocolate-Making Class
Become the maker. This 2-hour intensive takes you through the full bean-to-bar process. You will roast and grind the beans, master the technical demands of tempering, and mold your own bars using local seasonal inclusions to take home.

3. Bonbon-Making Workshop
For those who seek the peak of artisanal chocolate. This advanced workshop focuses on the artistry of the filled chocolate. Under the guidance of our master chocolatier, you will learn professional molding and decorating techniques to create sophisticated, hand-painted bonbons.

Este es el origen de todo: Chocolate Ancestral🏺🔥

Antes de las barras y los empaques, existía una conexión pura entre el fuego y el fruto. Hoy les mostramos un proceso que nos devuelve a las raíces: cocinar la mazorca de cacao entera para que las semillas absorban toda la dulzura natural del mucílago (la pulpa blanca y jugosa).

Al cocinar el cacao cerrado, el calor carameliza los azúcares de la pulpa, permitiendo que la semilla se impregne de notas frutales y melosas únicas. El resultado es una semilla suave, nutritiva y lista para consumirse directamente, ofreciendo una explosión de sabor que cuenta la historia de nuestros antepasados 🍃🍫

Es un recordatorio de que el cacao no es solo un ingrediente, es un fruto sagrado que se aprovecha en su totalidad. ¡Desliza para ver cómo transformamos la mazorca en este manjar ancestral!

Meet the heart and soul of our finca: Gilbert 🌿🧠

There are experts, and then there is Gilbert. Often called one of the most brilliant minds on the land, his knowledge of our wildlife is second to none. He reads Llano Azul and El Higueron farms like books. From the tiniest insect in the undergrowth to the complex biology of a ripening cacao pod, Gilbert can fill your visit with fascinating facts and data about every single inch of our production.

Our team is incredibly proud to work alongside him, and we believe a trip to the factory isn't complete without hearing his stories. He’s a living encyclopedia of the Upala ecosystem!

Nos encontramos esta rana de ojos rojos, tipica de los bosques de Costa Rica y una de las grandes representantes de nuestra biodiversidad. La especie se llama Red-eyed tree frog o Agalychnis callidryas. Algo interesante de estas es que en el dia mantienen esta postura en las hojas y pasan desapercibidas, pero si se sienten amenazadas muestran sus ojos rojos y exhiben sus colores para asustar a un posible depredador.

Una vez mas, nuestra finca Blue Valley Chocolate - Llano Azul nos muestra la importancia de una produccion inteligente, consciente y sostenible para proteger estas especies.

Swipe to meet the stunning Bocaracá (Eyelash Viper) we recently spotted at our finca in Upala 🐍

The Eyelash Viper (Bothriechis schlegelii) is one of Costa Rica’s most iconic inhabitants. Named for the modified scales above its eyes that resemble long eyelashes, these small but striking snakes are masters of camouflage. While this individual’s vibrant yellow "oropel" morph stands out beautifully against the green, it’s actually a brilliant way to blend into bright tropical fruits and flowers!

Finding these vipers on our farm is a testament to the biodiversity we work hard to protect. A healthy ecosystem in Upala means better soil, a balanced environment, and ultimately, more soul in our cacao 🍫

We share this land with some incredible neighbors, though we always make sure to keep a respectful distance and let them rule their branch in peace ✨

Ever wonder how we get those perfect cacao nibs? 🧐 Swipe to see the magic behind the scenes!

Today we’re highlighting one of the most critical steps in our factory: the winnowing process. This machine is our "husk-separator," expertly designed to crack the roasted beans and blow away the light outer peel (the husk), leaving behind only the pure, flavorful cacao nibs.

Why is this process so important? 🙌

Flavor Purity: The peel can be bitter and fibrous. By removing it completely, we ensure that only the rich, nutty notes of the cacao make it into our Maleku luxury bars.

Texture Excellence: For that signature silky-smooth melt, the nibs must be perfectly clean before they hit the stone grinders.

Zero Waste: While the peels don't go into our chocolate, we save them to create our aromatic Cacao Tea, so every part of the bean is honored!🍫
