Baking with freshly milled flour.

A common question is whether it can be used like store-bought flour.

Short answer: yes.
But it behaves a bit differentlyโ€”and understanding that helps you get more consistent results.

Fresh-milled flour is made by grinding grain shortly before baking. Unlike commercial flour, it still contains bran, germ, and endosperm, which means more oils, enzymes, nutrients, and fiberโ€”affecting how dough behaves.

Key differences:

More water needed
It absorbs more waterโ€”usually about up to 8% more. Holding back some water and adding it gradually helps control the dough.

The dough may feel heavier and less smooth. This is normal; with proper hydration and rest, it improves.

Faster fermentation:
More enzymes can speed things up, so watch the dough rather than the clock.

A 30โ€“60 minute rest (autolyse) improves structure and handling.

Grain type:
Wheat: strong gluten
Spelt: softer, more delicate
Rye: low gluten, stickier dough

Sifting bran can create a lighter crumb, but using the whole flour works just as well.

Fresh-milled flour gives deeper, slightly sweet flavor and more aroma.

Begin with 25โ€“30% fresh-milled flour and increase gradually.

No mill?
We have a grain mill in our shop, so you can get freshly milled flour anytime.

Fazit: No new method neededโ€”just a bit more water, patience, and attention for better flavor and character.
