As Executive Chef and Culinary Leader of Operakällaren, Emanuel works within a dining room whose history reaches back to the 18th century. His approach is rooted in classical cooking - hot food from the pan and grill, sauce to plate, honest flavors and precision - while drawing inspiration from cuisines around the world.
At Operakällaren, Emanuel prepares two dishes deeply connected to his culinary story: A coconut sorbet with caviar, born from an earlier collaboration with Daniel Höglander, and a truffle Pithivier that carries forward the memory and legacy of his former colleague.
Then, at Leche Negra, the atmosphere changes completely. Conceived as a French-style bistro with New York inspiration, the restaurant combines comfort food with fine-dining precision. Emanuel's vision is simple: Food that is exciting and beautifully executed, yet still feels as comforting as something cooked by your grandmother.
