Recipes for a life sweetened by glucose 😋🍓
Coconut Vanilla Panna Cotta with Strawberry Sauce 🥥🌿
Serves 4
Panna Cotta:
🟢 1 vanilla pod
🟢 200 ml plant-based cream
🟢 400 ml coconut milk
🟢 2 tbsp dextrose
🟢 1 heaped tsp agar agar
Strawberry Sauce:
🟢 150 g strawberries (fresh or frozen)
🟢 1–2 tsp dextrose
🟢 1 dash lemon juice
Instructions:
1️⃣ Split the vanilla pod lengthwise and scrape out the seeds.
2️⃣ In a saucepan, bring cream, coconut milk, vanilla seeds, agar agar, and dextrose to a boil while stirring. Reduce heat and simmer for 2–3 minutes.
3️⃣ Pour into four glasses, let cool, then refrigerate for at least 2 hours to set.
4️⃣ For the sauce, puree strawberries with dextrose and lemon juice. Heat briefly if desired, allow to cool, and spoon over the panna cotta.
✨ Tip: If strawberries aren’t well tolerated, replace them with a small amount of rhubarb – depending on your tolerance.
