Kabsa (Mutton/Goat)

A rich and aromatic rice dish made with tender mutton or goat meat, warm spices, and fluffy basmati rice — full of Middle Eastern flavor in every bite!

Ingredients:

For the Meat

- 2 kg mutton or goat meat, cut into medium pieces
- 2 tablespoons oil or ghee
- 2 large onion, chopped
- 5 cloves garlic, minced
- tomatoes puree
- 2 tablespoons tomato paste
- 2 pcs dried lime
- 3 bay leaves
- 2 pcs star anise
- 1 cinnamon stick
- 3 pcs cardamon

Kabsa Spices

- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander powder
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- ½ teaspoon cardamom powder
- ½ teaspoon cloves

For the Rice

- 3 cups basmati rice, washed and soaked for 30 minutes
- salt to taste
- 4 green pepper/ chilies

*soak the meat in milk

Mahshi- stuffed vegetables

Authentic Egyptian Mahshi Recipe

Mahshi is one of the most beloved dishes in Egyptian and Middle Eastern cuisine — tender vegetables stuffed with a flavorful rice and herb filling, then slowly cooked in rich tomato and chicken broth until perfectly delicious. 💚🍅

🥒🍆🫑 Vegetables:
• Zucchini
• Bell peppers
• Eggplant

🛒 Ingredients for the Filling:
• 1 1/2 cup rice, washed
• 2 large onion, finely chopped
• 5 tomatoes, blended or tomato puree
• 1 cup fresh parsley, chopped
• 1/2 cup dill, chopped
• 1/2 cup cilantro, chopped
• mint leaves chopped
• 2 tbsp tomato paste
• 5 cloves garlic, minced
• 2 tsp salt
• pinch of sugar
• 1 tsp black pepper
• 1/2 cup mahshi mix spices
• 2 tbsp ghee/ butter

🍅 For the Cooking Broth:
👩‍🍳 1 Whole chicken for chicken broth/ stock
With
•2 tomatoes
•1 large onion
•4 pcs green pepper
• bayleaves
• peppercorns
• salt
• Paprika powder
• curry powder
• cumin
• water

Fish Masala with Turmeric Rice

A flavorful and comforting meal packed with rich spices, tender fish, and fragrant yellow rice 💛🐟 Perfect for lunch or dinner!

🍛 Fish Masala Ingredients:

For frying:
- 1 big fish or sliced fish
- cooking oil

For sauce:
- 1 large onion, chopped
- 2 large tomatoes
- 2 large green pepper
- 1/2 cup water
- 1 tbsp tomato paste
- 5 cloves garlic, minced
- 3 tsp garam masala
- pinch of sugar
- 1/2 tsp chili powder (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish

🍚 Turmeric Rice Ingredients:

- 2 cups rice
- 3 cups water
- 1 tbsp butter, ghee or oil
- 1 tsp turmeric powder
- 5 cloves garlic, minced
- 1 small onion, chopped
- Salt to taste

Serve the Fish Masala over warm Turmeric Rice and enjoy every bite 😋💛

Simple, classic, and perfect with a cup of tea or coffee!

Ingredients:

- 3 cups cake flour
- 1 cup sugar
- 1 cup butter (softened)
- 1 cup milk
- 6 eggs
- 2 tsp vanilla extract
- 3 tsp baking powder
- 1/4 tsp salt

Beef Béchamel (Egyptian baked pasta)—a comforting dish known in Egypt as macarona béchamel

Ingredients
1. For the pasta layer:
500 g penne or macaroni pasta
Water (for boiling)
Salt

2. For the beef filling:
1kg ground beef
4 medium onion, finely chopped
5 cloves garlic, minced
1 big tomato chopped
1big green pepper sliced
3 ghee or oil
Salt and black pepper (to taste)
1 tsp allspice or mixed spices, 7 spices (optional, but traditional)
1/2 tsp cinnamon (optional, Egyptian-style flavor)

3.For the béchamel sauce:
(I used Ready-made Bechamel powder mix)

Ingredients for the sauce:
4 tbsp butter
4 tbsp all-purpose flour
4 cups milk (warm)
Salt and white or black pepper
Pinch of nutmeg (optional)
*Double the ingredients for 1kg ground beef and 500g penne macaroni

4. For topping:
1 egg (optional, mixed into some béchamel for a golden top) and mozzarella (optional)

Homemade Shrimp Spring Rolls 🦐

A crispy and flavorful mix of shrimp, veggies, and a hint of ginger—perfect for snacks or sharing!

📝 Ingredients:
》250g shrimp, peeled and chopped
》2 cups cabbage, finely shredded
》2 medium carrot, julienned
》1 medium sweet potato, julienned
》1 tablespoon fresh ginger, minced
》5 cloves garlic, minced
》1 medium onion
》Salt and pepper, to taste
》Spring roll wrappers
》1 egg (for sealing)
》Cooking oil (for frying)

💡 Tip: Don’t overfill your wrappers to avoid breaking while frying!

》500g shrimp, cleaned (with shell)
》50g butter
》10 cloves garlic minced
》Ginger minced
》2 tbsp Orange juice
》Salt and pepper to taste
》1 teaspoon sugar (optional, balances flavor)

🐐 Kalderetang Kambing (Goat Caldereta) 🍲
(لحمة ماعز)

A rich, hearty Filipino classic with tender goat meat simmered in a savory tomato paste and milk —loaded with fried potatoes, carrots, chickpeas, and colorful bell peppers. Perfect for handaan or a cozy family meal! 🇵🇭

📝 Ingredients:

- 1 kg goat meat (kambing), cut into serving pieces
- 3 tbsp ghee/ cooking oil
- garlic, minced
- onion, chopped
- 3 tbsp tomato paste
- 2 cups milk and hot water or beef broth
- 2 medium potatoes, cubed & fried
- 2 medium carrots, sliced & lightly fried
- 1 cup chickpeas (garbanzos), cooked or canned
- 1 red, 1 yellow & 1 green bell pepper (capsicum), sliced
- no liver spread (it is optional but traditional)
- 1–2 tbsp soy sauce
- 2 tbsp patis or fish sauce
- Salt & pepper to taste
- Chili flakes or siling labuyo (optional, for spice)

👩‍🍳 Instructions:

1. Heat ghee/oil and sauté garlic and onion until fragrant.
2. Add goat meat and cook until lightly browned.
3. Pour in soy sauce, patis and tomato paste. Stir well.
4. Add milk, hot water/broth. Simmer for 45–60 minutes or until meat is tender.
5. Add fried potatoes, and carrots. Simmer for another 5–10 minutes.
6. Toss in bell peppers and chickpeas last and cook for 2–3 minutes to keep them crisp.
8. Season with salt, pepper, and chili if desired.

🍽️ Serving Tip:
Best served hot with steamed rice—mas lalong sumasarap habang tumatagal! 😋
