🐐 Kalderetang Kambing (Goat Caldereta) 🍲

A rich, hearty Filipino classic with tender goat meat simmered in a savory tomato paste and milk —loaded with fried potatoes, carrots, chickpeas, and colorful bell peppers. Perfect for handaan or a cozy family meal! 🇵🇭
📝 Ingredients:
- 1 kg goat meat (kambing), cut into serving pieces
- 3 tbsp ghee/ cooking oil
- garlic, minced
- onion, chopped
- 3 tbsp tomato paste
- 2 cups milk and hot water or beef broth
- 2 medium potatoes, cubed & fried
- 2 medium carrots, sliced & lightly fried
- 1 cup chickpeas (garbanzos), cooked or canned
- 1 red, 1 yellow & 1 green bell pepper (capsicum), sliced
- no liver spread (it is optional but traditional)
- 1–2 tbsp soy sauce
- 2 tbsp patis or fish sauce
- Salt & pepper to taste
- Chili flakes or siling labuyo (optional, for spice)
👩🍳 Instructions:
1. Heat ghee/oil and sauté garlic and onion until fragrant.
2. Add goat meat and cook until lightly browned.
3. Pour in soy sauce, patis and tomato paste. Stir well.
4. Add milk, hot water/broth. Simmer for 45–60 minutes or until meat is tender.
5. Add fried potatoes, and carrots. Simmer for another 5–10 minutes.
6. Toss in bell peppers and chickpeas last and cook for 2–3 minutes to keep them crisp.
8. Season with salt, pepper, and chili if desired.
