Legend has it that the olive tree was a gift from the goddess Athena to humanity. Homer referred to olive oil as liquid gold, and Thomas Jefferson proclaimed it the richest gift of heaven. For centuries, a gift of olive oil was a welcome treasure. Food-lovers have never entirely forgotten the delightful golden fluid, but in recent years, a new awareness of the benefits of olive oil has been born. Science has turned its investigative eye upon it in recent years, and numerous studies have only reinforced the notion that olive oil is an amazing substance with numerous benefits. Here are 101 of them.
Olive oil can:

1. Make your arteries more elastic – Two tablespoons daily makes you more resistant to strokes and heart attack.
2. Reduce bad cholesterol levels. – Olive oil contains polyphenols, which help to keep your levels of LDL cholesterol within healthy ranges.
3. Make you less hungry – Olive oil makes you feel sated and tends to make you eat less and have fewer sugar cravings.
4. Reduce the risk of stroke in the elderly through yet another mechanism – Older people who ate diets rich in olive oil consumption, which contains plasma oleic acid, had fewer strokes in a 2011 study.
5. Lower the risk of coronary heart disease in women – Mediterranean cultures have long revered the olive and its oil, with good reason. An Italian study found that a diet that included olive oil along with plenty of leafy vegetables and fruit resulted in reduced rates of coronary heart disease in women enrolled in the study.

6. Cure or reduce acne – Although it sounds counterintuitive to use oil to fight pimples and blackheads, using an olive oil and salt scrub helps some types of acne.

ريزوتو الأسباراجوس والبسلة

المقادير:
1 ملعقة كبيرة زيت زيتون
1 بصلة، مقطعة مكعبات صغير
½1 كوب أرز الريزوتو
4 كوب مرقة دجاج ساخنة
1 كوب ماء مغلى
½1 كوب بسلة مجمدة
1 كوب بارميزان المبشور وبالإضافة إلى ¼ كوب مقطع شرائح صغيرة ورفيعة للتقديم
30 جرام زبدة، مقطعة
2 حزمة أسباراجوس، مقطع إلى قطع 5 سم
فلفل أسود مطحون طازج، للتقديم

الطريقة:
1-سخنى الزيت في إناء طبخ كبير على نار متوسطة. إطبخى البصل لمدة 5 دقائق، حتى يلين. أضيفى الأرز وحركي المزيج حتى تغطى الحبوب. أضيفى مرقة الدجاج والماء،إتركى المكونات حتى تغلى ثم خفضى الحرارة الى أقل درجة.
2- غطى الإناء لمدة 12 دقيقة، حتى ينضج الأرز ويصبح ليناً.
3-ارفعى الإناء من على النار. أضيفى البسلة، البارميزان المبشورة والزبدة. حركى المزيج حتى تذوب الزبدة.
4-ضيفى الأسباراجوس وحركى المزيج لخلطه. غطى الإناء وضعيه جانبا لمدة 5 دقائق.
5-قدمى الريزوتو و فوقه البارميزان والفلفل الأسود.

Olive oil has long been considered one of the greatest natural assets of the ancient world (and sometimes worth its weight in gold). It has consistently offered humanity the gifts of health and wealth, and is as complex and delicious as wine. Since antiquity, olive branches have been a symbol of peace – perhaps because olive trees were an agricultural offering bestowed to the colonies after they were subjugated in battle. Wherever disseminated, olive trees were lauded for their myriad everyday uses, from the culinary to the corporal.

MYSTICAL ELIXIR FROM GOD HERSELF

According to legend, the olive tree was a gift from Athena, the wise warrior-deity who also recognized the power of peace. Gray-eyed Athena competed with Poseidon for the affections of the Greeks, and had offered the versatile olive in response to the sea god’s gift of a saltwater well. The olive proved the better gift, offering refuge from the harsh sun, crowning the heads of champions, anointing warriors and athletes with its splendid golden tone.

To the Greeks, this was no mere tale to tell small children. When athletes rubbed it over their bodies before competition, it protected their skin from abrasions and the elements. According to Hippocrates, the ‘father of medicine’, olive oil could heal numerous ailments, among them mental illness, and what Hippocrates charmingly referred to as “the diseases of women”. It offered light when burned and was used by priests to consecrate the dead. The trees were so sacred that those who cut one down were condemned to death.

Though it’s difficult to pinpoint the beginning of man’s relationship with the pitted fruit, popular use most likely began in the southwest Mediterranean. Olive pits and wood fragments have been found in tombs throughout this area, some dating as far back as 5000 years.

OLIVE OIL ARRIVES IN ITALY

Brought to Southern Italy by the Greeks, the Romans aped their predecessors in admiration for the oil. The Roman Empire’s prodigious growth and colonial expansion brought trees to Spain and other colonies in the Iberian Peninsula, and was already in use by the Berber of North Africa when the Romans arrived. Today, Italy and Spain remain the epicenter of olive oil production and appreciation.

With the fall of the Roman Empire in the 5th century, olive cultivation declined for a thousand years. Olive oil steadily regained its role in the Middle Ages, however, when the Roman Catholic Church used it in rituals and anointings, namely the Oil of the Catechumens and Oil of the Sick, and to consecrate priests. The name Christ comes from the Greek word Kristos — the anointed one.

In the 16th century, Spanish explorers and missionaries introduced the olive to the New World, planting trees in Mexico, Argentina, and California, where it continues to grow today. Its real success in the New World, however, has been in Americans’ consumption of olive oil, which has increased dramatically in the past decades and made America the second largest market outside of Europe. Nearly all the olive oil consumed is imported from Europe, as America only produces 0.5% of world olive oil demands. The industry in America is gaining more attention, with California growing particularly delicious and complex varieties.

Types of Olive Oil

Olive oil is highly-prized not only for its health benefits, but also for its wonderful flavor.

The best olive oil is a blend of oil from a mixture of red-ripe (not green and not fully ripe) olives and a smaller proportion of oil from green olives of a different variety. Cold-pressing, a chemical-free process using only pressure, produces a higher quality of olive oil which is naturally lower in acidity.

When purchasing olive oil, it is important to check labels for the percentage of acidity, grade of oil, volume, and country of origin. The level of acidity is a key factor in choosing fine olive oil, along with color, flavor, and aroma. Here are the different categories of olive oils:

• Extra virgin olive oil: cold-pressed result of the first pressing of the olives, with only 1% acid; considered the finest and fruitiest, and thus the most expensive; ranges from a crystalline champagne color to greenish-golden to bright green; generally, the deeper the color, the more intense the olive flavor.

• Virgin olive oil: also a first-press oil, with a slightly higher acidity level of between 1-3%.

• Fino olive oil: (meaning fine in Italian) is a blend of extra virgin and virgin olive oils.

• Light olive oil: This version contains the same amount of beneficial monounsaturated fats as regular olive oil, but due to the refining process, it is lighter in color and has essentially no flavor. This makes it a good choice for baking and other purposes where the heavy flavor might not be desirable. This process also gives it a higher smoking point, making it a prime candidate for high-heat cooking.
