🌶️🌶️🌶️ ALL ASIA 🌶️🌶️🌶️

Mild mango chicken curry recipe! Delicious, creamy, slightly sweet and full of flavour 😋
Serves 2-3 people
All the spices, coconut milk, rice and naans are available in our shop in Arboleas or at our stall in Los Llanos market Arboleas ☺️

Ingredients:
2 tablespoons of oil (coconut or vegetable)
500g of chicken breast, cut into bite size pieces
1 onion finely chopped
2 heaped teaspoons of minced garlic paste
1 heaped teaspoon of minced ginger paste
1 teaspoon of mild curry powder
Half teaspoon of turmeric
Half teaspoon of cumin powder
Half teaspoon of paprika
1 ripe mango, diced
1 tin of coconut milk
Half cup of chicken broth
1 tablespoon of honey
Salt & pepper to taste
1 tablespoon of lime juice
Fresh coriander and chilli flakes for garnish

Instructions:

1. Heat oil in a pan on medium heat and sauté the onions until soft. Stir in the ginger & garlic and cook for another 1-2 minutes.
2. Add the chicken pieces until lightly browned on all sides.
3. Now add in the curry powder, turmeric, cumin and paprika over the chicken, stirring well to coat everything. Cook for another minute to release all the flavours.
4. Now stir in the diced mango, coconut milk and chicken broth and let it simmer on a low heat for 15 minutes until the chicken is tender and the sauce thickens slightly.
5. Stir in the honey, lime juice and season with salt and pepper to taste.
6. Garnish with fresh coriander and chilli flakes for an extra kick and serve with basmati rice and/or naan bread.

Pop in to see what we have available 😋😃

💥 From next Saturday 22nd March onwards we will be doing a small selection of homemade curries that will be available for collection from Los Llanos market in Arboleas. Orders have to be in by the Wednesday before so for example the 19th March next week. They will come frozen ready for you to take home and put in the oven or store in your freezer.
