Merry Christmas & Homemade Panettone Celebration! 🎄
Merry Christmas from ! Share the joy of baking with your family and indulge in the deliciousness of homemade Panettone🧁. Here's a simple yet perfect recipe to create this festive bread from scratch! 🎉🎁
Ingredients:
- Sponge Dough: Bread Flour 270g, Water 180g, Angel High Sugar Dry Yeast 7.2g
- Main Dough: Bread Flour 450g, Water 170g, Angel High Sugar Dry Yeast 5g, Granulated Sugar 75g, Salt 3g, Butter 130g
- Marinated Fruit Mixture: Raisins 350g, Chopped Cranberry 150g, Granted Orange Zest 150g, Rum 35g, Water 150g
Recipe:
1. Make Sponge Dough: Mix bread flour, water, and Angel high-sugar dry yeast. Knead into a smooth dough. Let it ferment at 26-28°C for 12 hours.
2. Prepare Marinated Fruit Mixture: Combine raisins, chopped cranberry, grated orange zest, rum, and water. Stir well, cover, and let it soak for 24 hours.
3. Make Main Dough:
1️⃣Mix bread flour, Angel high sugar dry yeast, granulated sugar, and the sponge dough. Add salt and softened butter, and knead until smooth. Gently fold in the soaked fruit mixture. Let the dough rise at 26-28°C for 60 minutes.
2️⃣Divide the dough into 390g portions and place into cupcake molds. Let them proof in a 35°C environment for 3 hours.
3️⃣Brush the top with egg wash and bake at 180°C for 30 minutes.

1. Yeast Types:
o Active Dry Yeast: Needs warm water activation (~37°C).
o Instant Yeast: Mixes directly with dry ingredients.
o Fresh Yeast: Strong fermentation, short shelf life, refrigerate.
2.Fermentation Control:
o Temperature: Best at 25-30°C.
o Hydration: Balanced moisture ensures proper fermentation.
o Sugar: Feeds yeast but too much can inhibit it.
o Salt: Regulates fermentation speed, use 1.5-2% of flour weight.
3. Troubleshooting:
o Under-fermentation: Add more yeast or extend fermentation time.
