The idea of the Big Green Salad Bar was conceived by two friends of I Taukei (indigenous Fijian) who are well traveled and have a passion for healthy living. Their vision was to make available to the people of Suva a variety of healthy and tasty salads that they had tasted around the world but that would incorporate ingredients and vegetables that were found locally, that would make everything on
their menu affordable. They are passionate about the people of Fiji realizing the importance of eating healthy food, that you are what you eat. Also close to their hearts is their Christian faith where the word of God clearly states in Corinthians 6:19-20, Your Body, His Temple. "Do you not know that your body is a temple of the Holy Spirit, who is in you, whom you have received from God? Therefore honor God with your body," We say all that to say this, that the food that is sold at the Green Salad Bar is both for the goodness of your body and your soul!
