We know you all love nut roasts and so, we have made a recipe that is as delicious as it is easy!
Ingredients you will need:
2 sticks of celery
1 small carrot
1 small onion
2 garlic cloves
1 red pepper
1 small courgette
150 grams mushrooms
150 grams mixed chopped nuts
100 grams breadcrumbs
100 grams lentils
1 tsp Oregano
1 tsp Smoked Paprika
1 tsp Thyme
300ml of vegetable stock
2 tbsp tomato puree
3 large eggs
50 grams of parmesan
2 tbsp Butter
1 tsp oil
Salt and Pepper to taste
Instructions:
1. Finely chop your onion, garlic, celery and red pepper. Throw this into a large frying pan with some butter and cook everything down until soft. Grate down your carrot, courgette and chop your mushrooms. Add this into the frying pan and stir, let it cook for 5 minutes on medium heat.
2. Add your spices and herbs, your rinsed lentils, tomato puree and stock. Cook for 30 minutes until the liquid has been absorbed by the lentils.
3. Pre-heat your oven to 180c/160 fan.
4. Turn the heat off and let the mixture cool, add in your breadcrumbs and eggs. Mix until combined.
5. Line a loaf tin with parchment paper and brush some oil on top of the paper, pour your mixture into your tin and press your mixture down with a spoon.
6. Top with parmesan, cover with foil and bake for 30 minutes. After remove the foil and bake a further 20 minutes until firm.
7. Let the roast cool for ten minutes before serving, this is delicious with a garlicky cream sauce or a rich tomato sauce.
