HAPPY SUNNY SUNDAY ☀️

After a busy week of chemo, bloods and appointments I finally got to do something fun this weekend. Making one of my all time favourite desserts ‘puddings’ from childhood! This was my treat when we went to a little cafe in Tynemouth and if we were lucky Super Gran was being filmed!

I spent half a day with one of the best patisserie chefs here in Northern Ireland learning how to make BABA AU RHUM alongside fellow baking enthusiast Andrew.

From learning the skills to get the right texture for making the ‘bun’ base, not unlike brioche but a denser more gluten texture to hold what’s to come!! To then creating the layered ingredients, spiced dark rum syrup, which our buns would be drunkenly drowned in, to the homemade raspberry jam and vanilla mascarpone cream!

What would you say is an unpopular bake?

Is it one that you don’t like?
Gone out of fashion?
Or a regional bake that isn’t popular outside that region?

So I started off doing a summer pudding with my vintage jelly mould which turned out a disaster! It wouldn’t budge for many reasons, bread wrong type, too thick, I decided to add jelly etc, etc! No idea why I thought I would make this as soggy bread really doesn’t appeal at all and I can understand why it may have fallen out of favour for some. Don’t hate me if you love it’s just my personal preference.

So a quick switch to a popular in NI but unpopular bake [no bake] elsewhere that anyone can achieve and a great one to do with the kiddies!

Quindim a delicious sweet Brazilian coconut dessert! 🇧🇷

This didn’t quite work out as I’d hoped, there should have been a separation between the coconut base and egg custard on the top to give a beautiful yellow glossy topping!

I had a feeling while I was making it that the texture wasn’t right but followed the recipe I’d chosen… I’ll definitely do it again but with a different recipe. Plus I think I may have taken it out of the mould too quickly… I have no patience 🙈
Not all recipes are equal! And it’s always good to learn from mistakes…

It still tasted great & I love coconut I just needed a drizzle of dark chocolate!!!

CLASSIC camper van weather, every season in one day…

So that means plenty of chilling and popping the kettle on with a slice of coffee cake, ginger cake or date & walnut on the side!!

Today’s classic cake selection for … enough for sharing with our fellow campers and friends.

Decided to give coffee & walnut and her ginger cake a go from The Irish Bakery cookbook, very traditional and classic recipes that are winners time and time again, passed down for generations!! 💚

Coffee cake was my favourite as a child and I still love it… I used make it for a very dear friend of mine, who sadly is no longer with us, so it’s been a while since I’ve made it!

You just can’t beat a classic cake recipe! The date & walnut is my m**s! [recipe a few grids back].

It’s so important we don’t loose these family recipes.

Took ourselves off for a wee wander while the weather was good and the energy allowed…

Sometimes it’s good to rediscover what’s on your doorstep! So many changes, new development and yet the same familiarity.

We started off with hot chocolate and ended up at the other end with the whiskey and found a bite to eat in the middle!

[after storm David]

Rhubarb & strawberry stripe cake to celebrate this Easter.

I used the recipe from Sweet by & without the depth of colour they get from using blackcurrants, as I decided to use my homemade rhubarb, strawberry & sumac conserve which gave a paler colour but no less tasty!

Fresh freesia for decoration and the fragrance of spring for today’s SPRING theme for Sunday afternoon baking club! 🌼
