Focus on Monkfish.

Found in South West England and North & West Scottish waters.

Also sometimes called 'Toadfish' or Sea Frogs' because of their ugly appearance. They dwell at the bottom of the sea and use their fins to 'walk' along the seabed bed.

A mild, sweet taste with a dense texture. Monkfish have just one central bone and produce 2 fillets from a fish. Monk Cheeks are a particular delicacy!

Great for pan frying, roasting and on the BBQ. The flesh is also brilliant in sauces and curry's as it takes flavour beautifully.

A great fish for the summer months!

Another couple of Caterfish picks for the month of June!

Sandsole - a right eyed flatfish with an elongated body. Delicate and sweet with a firm flesh. Available from South Coast waters.

Monkfish - a gorgeous firm white flesh. Monkfish has a large ugly head and is a bottom dwelling fish. Great for the bbq and has just one central bone. Available from South West waters and Scotland. Monkfish cheeks are a particular delicacy!

Red Gurnard - a bottom dwelling fish with a distinctive bright red body. A meaty, pink/white flesh with a firm texture. Caught in South West waters of the UK.

John Dory - also called St Peters fish, as the 'spot' on it's side are said to be St Peters fingerprints. A flat round body with a firm, flaky flesh with a mild sweet flavour. Caught in the waters of Cornwall and Brixham. At their very best in May and June.

Some of our Caterfish picks for the month of June.

Hake has a lovely, soft and delicate flesh. High in protien and a very low fat content. A similar flavour to Cod. It is a beloved fish in Spain and catching on quickly in the UK. Caught mainly in he South Coast of England.

Plaice is a lovely flat fish. Very high in vitamin B and D. It has a fine flaky texture. Filleted or served whole.

Halibut is a larger flat fish and has a dense meaty flavour. It has a mild and sweet flavour. Fantastic on a Summer menu.
