As fresh and bright as a new day, my latest cider - Dawn Chorus!
It's a dry, sparkling apple cider and delicious. The aroma is rich apple, almost sweet, although this cider has been fermented to absolute dryness. On the palate comes a sharp hit of green apple fruit. It's suck-your-cheeks-in tangy, with white wine characteristics. The length is medium, with mild tannins balancing crisp, underripe apple and white grape fruitiness.
I'm really pleased with how this cider has turned out. It was the first batch of the harvest in 2024, pressed between the 14th and 18th of October - which is a good few weeks later than I'd intended. But this meant that I caught the very first of the Bramleys. It's 73% Bramley, 17% Spartan and 10% Laxton's Superb. All these varieties have quite a long season and this cider is a textbook example of how much a cider can vary due to the ripeness of the apples. Using Bramleys from the same trees, this cider is fresh, zingy and green-apple tart, compared with another of my 2024 ciders Late Pressing, made in December, which is rounded and mellow with stored apple flavours.
Dawn Chorus is wild fermented, single year, single orchard, full juice, naturally sparkling (pet nat), unfiltered, with no ingredients other than fresh apples. It practically sings with flavour. As bright and fresh as the first rays of sun in the morning. And this inspired my choice of name!
