Italia Sausage Breakfast Focaccia 🌭

Big Bank Holiday Brunch…sorted! And yes, you absolutely *can* make your brunch on the BBQ! ☀️

Ingredients
• HECK! Chicken Italia Chipolatas
• Focaccia loaf × 1 large
• Ricotta × 200g
• Red pepper × 1
• Tomato x 1
• Basil leaves
• Olive oil
• Salt & pepper

Method
· Heat the oven to 190°C.
· Slice the pepper, toss with olive oil and spread out on a tray.
· Roast for around 20 minutes until soft, sweet and lightly charred.
· Cook the sausages by pan-frying or grilling until golden and cooked through.
· Slice the sausages lengthways and set aside.
· Warm the focaccia in the oven until soft inside with a little crisp on the edges.
· Slice the focaccia open, ready to build.
· Spread a generous layer of ricotta over the base.
· Layer up with the sausage, sliced tomato and roasted peppers.
· Season lightly, close up, and get stuck in.

🌭🫓Gluten-Free Red Pesto & Chicken Italia Sausage Flatbreads 🫓 🌭

The weather might not be giving BBQ day…but this recipe is! 🥳

These loaded flatbreads bring together HECK! Chicken Italia sausages with rich red pesto, creamy mozzarella and punchy sun-dried tomatoes for an easy meal that feels a little bit special without the faff.

INGREDIENTS
* 3 HECK! Chicken Italia sausages
* 3 gluten-free small flatbreads
* 3 tbsp red pesto
* 30g mozzarella balls
* 20g sun-dried tomatoes
* 20g rocket
* 10g olives, thinly sliced
* 3 tsp pine nuts
* Balsamic glaze, to finish
* Chips, to serve

METHOD
1. Cook the chips�Cook the chips according to the pack instructions until golden and crispy.
2. Cook the sausages�Heat a frying pan over medium heat and cook the Chicken Italia sausages for 10–12 minutes, turning occasionally, until golden and cooked through.
3. Warm the gluten-free flatbreads�Lightly toast the flatbreads until warm and slightly crisp around the edges.
4. Build the base�Spread each flatbread generously with red pesto, right to the edges.
5. Load them up�Top with rocket, mozzarella, sun-dried tomatoes, olives and pine nuts.
6. Finish with the sausages�Slice the sausages and layer them over the flatbreads.
7. Serve�Finish with a drizzle of balsamic glaze and serve straight away with crispy chips on the side.

Chicken Italia Lasagne Burger 🍔

Lasagne… but make it a burger 🙌

Juicy HECK! Thick Chicken Italia Burgers stacked with rich beef ragu, creamy béchamel and melty mozzarella for the ultimate comfort-food upgrade. Big flavour, slightly messy, absolutely worth it.

WHAT YOU’LL NEED
4 HECK! Thick Chicken Italia Burgers
4 burger buns
300g beef mince
1 small onion, finely diced
2 garlic cloves, minced
200ml tomato passata
1 tbsp tomato purée
1 tsp dried oregano
1 tsp dried basil
150g mozzarella, sliced
100 ml béchamel sauce
40g Parmesan, grated
Fresh basil, to finish
1 tbsp olive oil
Salt & black pepper

METHOD 🧑‍🍳

Make the ragu
Heat the olive oil in a pan over medium heat. Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another minute.

Build the flavour
Add the beef mince and cook until browned. Stir through the tomato purée, passata, oregano and basil. Season with salt and pepper, then simmer for 15–20 minutes until thick, rich and full of flavour.

Cook the burgers
Cook the HECK! Thick Chicken Italia Burgers following the pack instructions until golden and cooked through.

Toast the buns
Lightly toast the burger buns until golden.

Build your burger
Place the burger onto the bun base, then top with a generous spoonful of beef ragu, slices of mozzarella, a drizzle of béchamel sauce and a sprinkle of Parmesan.

Finish & serve
Grill briefly until the cheese is melted and bubbling. Finish with fresh basil and serve straight away.

Chicken, Red Pepper & Feta Greek-Style Sausage Salad 🥗🌭

Fancy a little mid-week holiday? Fresh, filling and full of flavour. 🤩

This Greek-style salad combines juicy HECK! Chicken, Feta & Red Pepper chipolatas with crisp veg, lentils and a zesty lemon dressing for a feel-good meal that’s light, satisfying and ready in no time.

Ingredients
• 1 pack HECK! Chicken, Feta & Red Pepper Chipolatas, sliced
• 1 red onion, diced
• 100g mixed olives
• 1 red pepper, diced
• 1 cucumber, diced
• 50g rocket
• 100g cooked lentils
• 5 radishes, sliced
• Juice of 1 lemon
• 20ml extra virgin olive oil

Method
1 Cook the sausages
Cook the chipolatas following the pack instructions. Once cooked, slice and leave to cool slightly.
2 Make the dressing
In a small bowl, whisk together the lemon juice and olive oil.
3 Build the salad
In a large bowl, combine the lentils, red onion, red pepper, cucumber, olives, radishes and rocket.
4 Bring it together
Add the sliced sausages, drizzle over the dressing and toss gently to combine.
5 Serve
Serve straight away for a fresh, flavour-packed meal.

Top Tip
Add a crumble of extra feta on top for an even bigger flavour hit.
