Wild Venison Back In Stock 🦌

We love to promote the beautiful meat that comes from wild deer, the health related benefits as well as being the most sustainable meat to consume in the country!

We are supplied Deer weekly throughout the winter season, from a private hunter who stalks them throughout the countryside of North Essex.

Our staff butcher the whole carcass’ and produce a range of cuts from Haunch & Saddle Roasts. Plenty of steaks & diced braising packs.

Whilst also producing sausages from the trim, mixed with fatty pork to produce a good consistency within the sausage. This week’s are also mixed with cranberries to add a nice sweetness, balancing with the rich flavour of venison!

It’s very popular with ourselves so feel free to call us & place an order if you wish for anything specific!

🎄 Christmas Topside Roast 🎄

Everyone’s go to Sunday Roast with us we pride ourselves on providing superb Topside. All sourced from our local farmer in Southminster & butchered from whole carcass’ beef on the premises, it’s gets to dry age in our fridge along with all the steak meat, resulting in a beautifully tender and flavoursome roast.

This really sets our Topside above most other butcher’s, who may have to buy in pre prepared topside’s that won’t have the tenderness or overall quality of ours.

🎄 Christmas Rib of Beef 🎄

We pride ourselves on supplying nothing but the best all throughout the year & at Christmas the same applies. We dry age our hand selected Ribs of Beef for 4-5 weeks ensuring a beautiful flavour & texture.

We’ve had some incredible feedback of late regarding our Rib Roasts, making us even more certain they’ll be fantastic come Christmas Day.

🎄 Christmas Salt Marsh Lamb 🎄

All throughout the year and changes in the seasons, our Lamb is always incredible as they graze on the grasses and herbs of coastal salt marshes. This produces premium lamb with a sweet but rich flavour.

We dry age our lambs whole for 7-10 days ensuring it develops into its full potential of flavour and tenderness.

We take orders on Leg & Shoulder roasts whether on the bone or rolled, French Trimmed Racks & Chops if you wish!

🎄 Christmas Gammons 🎄

A staple on the dinner table for Christmas. You can never have enough and it’s the perfect meat to ensure you have enough leftovers for Boxing Day cold meat.

We do quarter’s, halves and whole Gammons whether it be Smoked or Unsmoked.

Unlike most Butcher’s, we take the time to trim internally on the gammon taking out any excess fat or gristle. Ensuring each slice is perfect!

Bring it to the boil with cold water, throw away the water and start that process again. Leave to simmer with bay leaves and peppercorns until internal temperature is 55c. Take it out, peel off any skin, score the fat & glaze before roasting at 180c until 65c internal. Let it rest before slicing the most beautiful ham.

Rolled Sirloin & Rump Roasts!

Strictly selected from ourselves and trusted suppliers, we ensure the highest quality of local, ethically farmed beef. Dry aged in our own facilities, we’ll expertly trim and roll to produce the perfect centre piece for your families Christmas dinner. Joints from 1kg - 4kg will be available, going up in half kg increments.

Sirloin & Rump have a great depth of flavour, cooked to a medium rare/medium finish they are beautifully tender, known of our dry aged steak. Cooking advice can be given by our team and we’ll also supply instructions on our labels for your convenience.
