If you’re firing up the smoker, this is one to try.

A 1.6kg Picanha (Beef Rump Cap) is seasoned and smoked low and slow, regularly sprayed with an apple cider vinegar and water mix, then rested before being flash-finished on the BBQ for that all-important sear.

Slice it against the grain and serve alongside:

🥩 This is how I think pulled pork should be done.

Everyone has their own way of cooking pulled pork, but this is mine.

I keep it simple. A good coating of rub, low and slow on the smoker, wrap it once it’s up to temperature, then let it finish until it’s tender enough to pull apart with ease.

That’s exactly why I use our Boneless Boston Butt.

Boneless, rindless and packed with natural marbling, it’s the perfect cut for low and slow cooking on the BBQ, smoker or slow cooker. It serves approximately 7-10 people, so there’s plenty to go around.
