We’re looking for a pizza chef / pizzaiola to join the team at Mercato Italiano.

Mercato is a busy independent Italian restaurant, deli and bar in Bridport, built around good ingredients, proper hospitality and doing things the right way. We care deeply about the quality of our product, from long fermentation dough to the ingredients we import directly from Italy.

We’re looking for someone who enjoys working as part of a friendly team, takes pride in consistency and quality, and has the drive to keep improving and be the best we can be.

Ciao, We’ll be taking a short pause.

Mercato Italiano will be CLOSED from Monday 2 March to Friday 6 March while we complete the final stage of our building and safety improvements 🔧
This is the last step in a series of upgrades to make the space safer, more comfortable and ready for the future.

We REOPEN on Saturday 7th March and look forward to welcoming you back 🍕🍷

🍝 and Pasta all'Amatriciana

ps. I double checked the recipe with my brother-in-law Paulo, who is from Rome and takes this dish very seriously. Traditionally, there are no onions, not garlic and no chilli; and Paolo prefer using rigatoni pasta shape.

🥓 Fry guanciale gently until the fat renders
🍷 Add a splash of white wine, let it cook off
🍅 Stir in good tinned tomatoes and simmer
🍝 Toss with al dente pasta, a little pasta water
🧀 Finish with plenty of Pecorino Romano

That’s it. Simple, savoury, very Roman 🇮🇹
