You ever accidentally create something out of nothing. I’m talking about food! This was almost about to be thrown away. I made the soup last week and today I jazzed it up a bit into a Moroccan inspired carrot & lentil soup, topped with crispy tagine lamb, fresh herbage and I bit of yoghurt. It tasted as good as it looked. Definitely a winter warmer and it was all made from leftovers! Winner winner!

Deep into soup season, at risk of throwing out some veg that was on the turn. I wizzed up this roasted carrot and garlic soup. something needed for when it’s cold outside.

Sometimes I like my soup on its own in a mug or sometimes with a bit of crotons on the top. Which one are you croutons or no crotons?

Oh go on then… if you insist!

Maple & Pecan Flapjacks

Soft, chewy, naturally sweet and packed with crunch — these flapjacks are 👌🏼

You’ll need:
• 250g oats
• 200g mashed banana
• 80g butter or coconut oil
• 3 tbsp maple syrup
• 50g chopped dates
• 50g chopped pecans (plus extra for the top!)
• A splash of vanilla extract
• Pinch of salt

Method:
1. Preheat oven to 160°C (fan).
2. Melt the butter, mash the bananas, then stir in the maple syrup.
3. Add the dates, pecans, vanilla, salt and oats. Mix well.
4. Line a square tin with parchment, leaving an overhang to lift out easily.
5. Spread the mixture evenly, pressing down firmly and bake for 30 minutes.
6. Leave to cool completely before slicing.
7. Enjoy — preferably with a cuppa.

Wrap them individually in an airtight container and they will be good for a week. Then grab and go. Better than store brought, any day of the week 😊

Can we take a minute to talk about the past 18 months?

It’s been… a lot.
In that time, I’ve lost 7 stone, had a stroke, a hysterectomy, and then a seizure. Each challenge on its own is tough, but together they’ve tested me mentally, emotionally, and physically.

Because of the seizure, I’m unable to drive for at least six months. It’s felt like losing a big piece of my independence. But you always have a choice — you can sit and feel sorry for yourself, or you can pull your socks up, dig deep, and find new ways to spend your time.

Back in 2022 I switched the oven off and I questioned whether I’d ever switch it back on again, I’ve barely cooked or created anything since. But recently, I’ve rediscovered a love for being in the kitchen — the calm, the creativity, the tiny sparks of joy it brings me. I’m not promising it’ll last forever, but right now I’m enjoying it again.

So I might share some of the things I’ve been making — just little moments of joy while I wait to get back on the road.

For now, enjoy the content while it lasts, and remember to be thankful for life. It is precious.

To my family I am eternally grateful for their unwavering support through this year. I truly don’t know how I would have managed without them.
