May is always a lovely time for fish 🐟
Including wild sea bass. A beautifully clean-flavoured fish with firm white flesh, ideal for grilling. Sustainably caught by rod and line fishermen, it’s one of the highlights of the season.
Wild plaice has also just returned to season. Delicate, lightly sweet and perfect for simple cooking.
Alongside the fresh catch, smoked haddock continues to be incredibly popular following its recent Gold Award at the Taste of the West awards. Naturally smoked in Hamilton's own smokehouse, it’s brilliant for everything from kedgeree to a simple supper with buttered potatoes.
Salmon portions remain a staple - rich, versatile and easy to build meals around through the week.
