Red Thai curry with prawns, sautΓ©ed in avocado oil
*Ingredients:*
**For the Curry Paste:**
- 2-3 red chilli peppers (adjust for spice level)
- 2 shallots, roughly chopped
- 3 cloves of garlic
- 1 lemongrass stalk, white part only, thinly sliced
- 1-inch piece of galangal or ginger, peeled and sliced
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon shrimp paste (optional)
- 1 tablespoon of Avocado Oil
**For the Curry:**
- 500g prawns, peeled and deveined
- 2 tablespoons Avocado Oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small courgette, sliced
- 1 can (400ml) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Thai basil leaves, for garnishing
- Lime wedges, for serving
- Cooked jasmine rice, for serving
*Instructions:*
**Making the Curry Paste:**
1. In a mortar and pestle or a food processor, combine all the curry paste ingredients: red chilli peppers, shallots, garlic, lemongrass, galangal or ginger, ground coriander, ground cumin, and shrimp paste (if using). Grind or process until you get a smooth paste.
**Preparing the Curry:**
1. Heat the Avocado Oil in a large pan or wok over medium heat.
2. Add the prepared curry paste and sautΓ© for a couple of minutes until fragrant.
3. Add the prawns and cook for about 2-3 minutes until they start to turn pink. Remove the prawns from the pan and set them aside.
4. In the same pan, add another tablespoon of Avocado Oil if needed. Add the sliced bell peppers and courgette. Stir-fry for a few minutes until they start to soften.
5. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine the flavors.
6. Return the cooked prawns to the pan and let the curry simmer for another 5-7 minutes, allowing the flavours to meld.
7. Taste the curry and adjust the seasoning by adding more fish sauce or sugar if needed.
8. Once the prawns are fully cooked and the vegetables are tender, remove the pan from heat.
9. Serve the Thai Red Curry Prawns over cooked jasmine rice. Garnish with Thai basil leaves and lime wedges.
