Got two Turbots, luckily one fish was smaller than the other, so one fish I did french Provence style , with mustard, dill and white wine glaze.. And the other fish I breaded in homemade bread crumbs (wholemeal) as I eat less than a half loaf a week, so I make crumbs …

My first homemade veggie curry, a favourite of mine, normally served as a side dish… Baingan Bhaji, tasty and easy to make.. 1 white onion, 1 tomato, 1 small a aubergine (roasted in air fryer for 15 mins at 190c) sautéed the onion, when translucent add 1 teaspoon full of any curry paste, then add chopped coriander, 1 clove of garlic, some cu**in,, to taste, along with paprika, put the sliced tomatoes in cook on further, add some water if it starts to dry out, then add the aubergine (after onions & tomatoes have broken down)… Now add 2 teaspoons of caramelised red onion chutney, and a sq**rt of tomato paste, you can use ketchup .. Your looking for quiet a thick consistency so go steady on adding too much water..
cook on to a rich consistency.. Sprinkle with some fresh coriander… A fabulous tasty dish….Try it!! Serve with poppadoms..

That’s why all of the great things I made will die with me!! It’s just a tragedy the things I and my staff did were not appreciated on a daily basis …
Our pies were sold at £2.10 each… too expensive for the peeps of Cleckheaton .. On a costing I did 2 years ago, with quality meat and top grade flour, they should
Have been £2.40 each… Any body that knows me, knows I don’t eat s**t, and I wasn’t prepared to bastardise any of my products that we made, after all I eat them..
Enjoy the bastardise s**t !! I’ll get on with my life .. Quality Our Silent Salesman… I will be making it for ME.. Blue skies a waiting!!😆😆

I’ve always been here for you, banging on about healthy food to cook at home… Well this Face book page is going to be, my connection with you till I drop dead….
Takeaway eating and dining out seems to be how people eat in not just Cleckheaton , but most of West Yorkshire…
But in doing so you have no control over fat, sugar, salt, or chemical additives…
I will continue to post here as I do love to cook and want to share it with everyone…. I’m 56 years old, and have NO medical issues!!! ..

So Jump into my cooking… And enjoy good food!!!…. It’s always better to cook for yourself, and 4 times cheaper, just buy a quality product and as for advice, if you need so to cook it!!
One of my personal favourites.. Sea trout lightly marinated in wasabi and Teriyaki, with fresh chilli, ginger and spring onions. Served with leek and broccoli.. I was going to make potato wedges, but I rarely eat potatoes.. Deadly easy to make this….. Crack on.. It would probably cost you £20 plus quid in a restaurant…. It cost me £8.00 all in… Please get to enjoy cooking!!!! Left overs next!!! Enjoy….

As I said I will not leave you!!! So here’s one Christmas and New Year left overs!!
Parma ham, any cheese ie Stilton, goats cheese, or any…
Simply, spread mustard on the Parma ham i used Dyon, but if yours is stronger use less.
Get your cheese cut in small batons, place at one end of the ham, place any salad cut small, i used lambs lettuce, three quarters thinly of the length of the ham.
Season with black pepper and roll up.. Serve with remaining salad, eat with crunchy bread..
If you’re as nuts as me about cooking, the brown stuff is a Balsamic vinegar reduction that I made myself, but you can lightly dash with balsamic vinegar!!!

Be creative.. enjoy your food !! It’s easy!! And don’t throw good food away…. 👍❤️ A beautiful animal, died for your food, so please respect it!!

After the death of my wife last year… I’m only 56 years old Ive decided to take early retirement.. Im fit and healthy and what to do the things I want to do and enjoy… I love my job, but sadly it’s now time to walk away, and choose My life to come first.. I have dedicated 39 years to Cleckheaton and the shop!! I have enjoyed it!!! And would like to thank My loyal customers, who have come along and supported on my journey through my career!!!!

It will be easier to answer to everybody’s comments in one post, and as always be Honest ….. I passionately care about my job of been a BODY BUTCHER!! … You may not understand that as to you everything comes in a plastic bag… But to be a true butcher, it’s a long, long learning process…. I’m proud, to have gone down THE FULL PROCESS!! And have learned my craft.. It took me 5 years to learn pork butchery German style, including curing and pickling.. Next was Beef butchery, again my Dad was a master, and I was expected to match him… I know he was a perfectionist and taught and influenced many butchers who went on to successfully own their own business!!! He told me never ever Bastardise your products… I kept that promise We buy the BEST meat and put it into or pies, and sausage..
We’ve always bought the best meat regardless of price to honour our business motto “Quality our silent salesman” ….
It’s a shame that I’m going to walk away from a shop that has served meat to Cleckheaton, as Metcalfe’s for 65 near years, and before and including previous family owners … That shop has been a butchers for nearly 150 plus years …… It is heartbreaking, that shop saluted Queen Victoria, went through the first, and second world wars, pandemic’s when people queued down the road !!!! And don’t forget the horse meat scandal with the supermarkets…… Sorry again you have forgotten!!!!
I hope you support the independent traders that are left in Cleckheaton ..
Your lucky enough to have a great long established jewellers Openshaws, a news agents, an indoor market, a great antiquity shop, a health shop, an optometric practitioner, and the best ironmongers, since open all hours!!
So Cleckheaton isn’t 100 % a service town.. So use it!!
We’ve even got a silversmiths, Red bench, I’ve bought some items from there, and noticed like me she is promoting her own style on jewellery, which I appreciate as another craft person… I love silver with a quirk!!!!
Love it when Paprus was in Cleckheaton as well…

Just saying good luck to all the real traders in Cleckheaton, you have my respect.. I think I’ve put the point forward in my opinions in my post over the years.. I don’t mind been “The bastard of Cleckheaton “ , but I’ve spoken my mind…. Quite liberating, at least I will be remembered!!! 

But ultimately thank you to my customers!!!
You know who you are I love you and I will miss you!!!

Only three days days to go!!!

Feels good, but it’s still painful, to say goodbye!! 😔
