There’s some beautiful new Spanish Cheese landed to go with this amazing weather we’re having in Costa Del Rhos!

We have a 6-month-aged Manchego.
Compo Llano; a Goats Cheese washed in red wine.
And finally Picos De Europa: a Mappe wrapped Blue cheese made with Cow, Goat and Sheep’s milk. This should come with a warning. Summer cold? This will clear it right away!

It’s rare we get to see a full Gorgonzola Dolce in the Deli, ours customer have usually snaffled it; so we thought we’d photograph the occasion!

This is a customer favourite for a reason; from the Lombardy region it’s a super creamy, sweet, mild blue. It’s clotted cream blue cheese. It’s perfect.

This award winning cheese is aged for 2-4 months and is almost like three cheeses in one; it features a creamy, mushroomy breakdown under a natural rind with a firm, lemony, and lactic core.

Si, we sell Burrata. Here it is with our Red Pesto, Conchglioni (massive shell) pasta, and rocket. We’ve also toasted some focaccia, rubbed it with garlic, a drizzle of olive oil and added some fresh tomatoes and rocket. Perfecto.

This weeks Cheese of the Week is a tour de force from the team who bring us the award winning and customer favourite Trefaldwyn Blue; it’s Ruby Red.

Ruby Red is an organic brie style cheese, with an incredible paste dyed with Achiote Tree Seeds to give it this vibrant orange colour.

Pair this beauty with Rose Wines, a hunk of bread, then drizzle with honey. Superb.

It’s Spring time in the Cheese Counter, and from top to bottom we have…

Eve - washed in Somerset cider brandy and wrapped in fig and vine leaves. This oozy goats cheese is like no other and an absolute triumph.

Cotswold Brie - a creamy and delicious whole cows milk cheese. This is a great example of a South West Brie.

Perl Wen - a customer favourite; it’s a cross between a brie and Caerphilly, and is a standout Welsh soft cheese.

Cornish Yarg - one of those that you ‘give it a go’ and then buy again and again. Yarg is another leaf wrapped cheese, this time in nettle leaves. This causes the mold to stick to the rind giving a complex flavour and a natural yoghurty paste.

Alp Blossom - IYKYK… A German Alpine cheese wrapped in meadow flowers like marigold and lavender. The scent of a meadow and the flavour is almost smoky without being smoked. Very complex and a real standout on any cheeseboard. This is our first full wheel and it won’t hang around long.

Tonight’s quick and tasty dinner; Bucatini Carbonara. Pancetta or Guanciale? Pecorini or Parmigiano? We mixed them all, but we were definitely set on Bucatini; a hollow pasta allowing sauces to coat both the inside and outside of the pasta. Buon appetito!
