As it's elderflower season, we thought it the perfect excuse to try out this recipe from Botivo for a refreshing non-alcoholic aperitif.
Simply combine 25ml Botivo, 15ml elderflower cordial and 150ml tonic water. Pour over ice and garnish with a fresh lemon wedge and a sprig of thyme.

Botivo is a non-alcoholic aperitivo inspired by an ancient tonic called an Oxymel, made by patiently infusing apple cider vinegar with fresh herbs and botanicals for several weeks, before the tart flavour is balanced out with honey. The result is a complex, booze-free drink with a long dry finish.
It's made from just 8 all-natural ingredients — rosemary, thyme, orange zest, gentian, wormwood, honey, fructose and British apple cider vinegar. And just like wine, each batch carries its own slightly distinct flavour profile depending on the season, soil and quirks of pollination.
