A healthy twist on a classic, give these Chicken BLT Stuffed Avocado a go from 👨‍🍳

Ingredients
2 cooked bacon slices, diced
70g cooked chicken, chopped
3 cherry tomatoes, halved
15g baby gem lettuce, chopped
Chopped parsley
100g Glenilen Natural Yoghurt
2 ripe avocados
Salt to taste
Fresh parsley to garnish

Method
Into a bowl, add the bacon, chicken, tomatoes and lettuce.
To this, add the natural yoghurt and mix to combine.
Add the chopped parsley, taste and adjust the seasoning.
Carefully cut two avocados in half and remove the stone. Season with salt.
I like to cut a small piece of the base, so the avocado half sits level on the plate.
Fill the centre of each avocado with the chicken BLT filling.
Top with parsley and serve

Experience operating dairy or food manufacturing equipment, including pasteurisation, homogenisation, fermentation, cooling, churning ,blending, and filling processes.

Strong understanding of food safety, hygiene and HACCP standards within a production environment.

Ability to troubleshoot equipment issues, multitask efficiently and work effectively as part of a fast-paced production team.

If you have dairy or food manufacturing experience, or have recently graduated in this field, and enjoy working in a collaborative production environment, we’d love to hear from you.

Pure yoghurt goodness, made to bring you happiness from the inside out ✨

Perfectly portioned for daily enjoyment, grab a creamy Glenilen Farm yoghurt with a delicious layer of strawberry every day of the week.

Have yourself a little midweek treat with these fruity baked berry oatmeal bars from 🍓

Crumble Mix
100g plain flour
100g porridge oats
¼ tsp bicarbonate of soda
Pinch ground cinnamon
25g butter, melted
25ml vegetable oil
30ml apple juice
25ml maple syrup

Filling
120g Glenilen Natural Yoghurt
180g frozen mixed berries
50ml maple syrup
25g cornflour

Method
Preheat the oven to 180C/160C fan.
Line a 8” square baking tin with parchment paper.
For the crumble mix, place the flour, oats, soda and cinnamon into a bowl and mix.
To this add the butter, oil, maple and apple juice.
Mix to form a crumble mix.
Add ½ of this mix to the base and press down with a spoon to compact.
Place in the fridge while you make the filling.
For the filling, add the yoghurt, frozen berries, cornflour and maple syrup to a bowl and mix well.
Spoon this onto the chilled base and spread to cover.
Sprinkle the remaining crumble mix on top and bake in the preheated oven for 40 minutes or until golden brown all over.
Remove, chill & portion.

Choosing Glenilen Farm means choosing over 25 years of heritage.

What began with Valerie selling her homemade cheesecakes at local farmers’ markets in West Cork has grown into a flourishing business. In the early days, milk from the farm’s own herd of 55 cows was used to create their products. As demand increased, Glenilen expanded to source milk from neighbouring farms within a 20-mile radius, always maintaining the same high standards of quality and freshness.

While much has grown, one thing hasn’t changed: Glenilen Farm’s commitment to bringing simple, everyday goodness to people who appreciate carefully made, great-tasting food.
