With the sun shining and half term in full swing, it’s the perfect week for something fresh, simple and delicious.

I’ll still be coming as usual this week, and I’d really recommend the halibut. It’s such a lovely fish — light, fresh and meaty, but still really easy to cook at home.

My favourite way to enjoy it is pan-fried with a little butter, garlic, lemon and fresh herbs. It’s gorgeous with new potatoes, seasonal greens or a fresh salad — the kind of meal that feels just right when the weather is bright.

Pan-Seared Halibut with Lemon, Garlic & Herb Butter

Ingredients:

Fresh halibut fillets
Butter
Garlic, finely chopped
Fresh parsley or dill
Lemon juice and zest
Salt and black pepper
A splash of olive oil

Method:
Pat the halibut dry and season with salt and pepper. Heat a little olive oil in a pan and cook the fish for a few minutes on each side until golden and just cooked through. Add butter, garlic, lemon zest and lemon juice to the pan, then spoon the melted herb butter over the fish before serving.

Serve with new potatoes, greens, or a fresh salad for a simple, restaurant-style dinner at home.

I’ve unfortunately got a flat tyre this morning! I’m currently at Dunchurch Library waiting for the recovery company to come and fix it.

🐟 GB Fish Sales – Easter Weekend Update 🐟

I’ll be at my usual stands this Thursday and Friday for the Easter weekend!

It’s set to be a busy one, so if you’re after anything specific, please try to get your orders before 2pm or today at the latest. I’ll make sure I have plenty stocked on the van both days.

I’ll give you a crowd-pleasing, “restaurant-at-home” recipe that works brilliantly for Halibut!
Lemon Butter & Herb Pan-Seared Halibut
Fresh, flaky, and full of flavour

Ingredients (serves 2)
· 2 fresh halibut fillets
· Sea salt & cracked black pepper
· 1 tbsp olive oil
· 40g butter
· 1 garlic clove, finely sliced
· Zest & juice of ½ lemon
· Small handful of fresh parsley (or dill), chopped
· Optional: capers or a splash of white wine

Method
1. Prep the fish
Pat the halibut dry and season both sides with salt and pepper.

2. Sear
Heat olive oil in a large pan over medium-high heat. Add the halibut and cook for 3–4 minutes per side, until golden and just cooked through.

3. Butter magic
Lower the heat, add butter and garlic to the pan. Let it foam gently, spooning the buttery goodness over the fish.

4. Finish
Add lemon zest, a squeeze of lemon juice, and herbs. If using, toss in capers or a splash of white wine for extra depth.

5. Serve immediately
Spoon over the pan juices and enjoy.

Perfect with:
· Crushed new potatoes
· Seasonal greens or tenderstem broccoli
· A crisp green salad and chilled white wine

URGENT NOTICE – PLEASE PASS ON

I’m very sorry to inform you that my van has unfortunately broken down this morning. Due to the cold weather, it has completely locked up and is currently at the garage.

As a result, I won’t be able to attend today and will be back later this week (Thursday/Friday).

I sincerely apologise for the inconvenience, i am especially conscious for any customers who may be waiting in the cold. I am truly sorry for the disruption.
