With the sun shining and half term in full swing, it’s the perfect week for something fresh, simple and delicious.
I’ll still be coming as usual this week, and I’d really recommend the halibut. It’s such a lovely fish — light, fresh and meaty, but still really easy to cook at home.
My favourite way to enjoy it is pan-fried with a little butter, garlic, lemon and fresh herbs. It’s gorgeous with new potatoes, seasonal greens or a fresh salad — the kind of meal that feels just right when the weather is bright.
Pan-Seared Halibut with Lemon, Garlic & Herb Butter
Ingredients:
Fresh halibut fillets
Butter
Garlic, finely chopped
Fresh parsley or dill
Lemon juice and zest
Salt and black pepper
A splash of olive oil
Method:
Pat the halibut dry and season with salt and pepper. Heat a little olive oil in a pan and cook the fish for a few minutes on each side until golden and just cooked through. Add butter, garlic, lemon zest and lemon juice to the pan, then spoon the melted herb butter over the fish before serving.
Serve with new potatoes, greens, or a fresh salad for a simple, restaurant-style dinner at home.
