First stop on the Marshall & Sons World Tour takes us to the vibrant city of Rio de Janeiro and one of Brazil's most famous seafood dishes – Moqueca de Peixe!

Moqueca is a traditional Brazilian fish stew that dates back hundreds of years and after making it i can absolutely see why its been going as long as it has been.

Beautiful fresh fish in a stunning spiced broth, served with fluffy white rice. I feel like it's a dish that perfectly captures the colours, warmth and spirit of Brazil.

Good afternoon everyone! I hope youve all had a lovely weekend and the week is treating you well so far!

For those of you that work 5 days a week - in the words of Bon Jovi - were half way there!

And for those of you that are currently enjoying retirement then congratulations because every day is basically a saturday for you! Enjoy it! You deserve it! Lucky sods!

Anyway.. back to business!

20 different recipes, 20 different countries, 20 consecutive weeks! ( Dont hold me to that.. there may be gaps on delivery as im a perfectionist πŸ˜…)

Friday marked national fish and chip day here in the UK but seeing as we were working and travelling home on Friday, Finn and I decided to visit one of our regulars - The lovely Kelly and Co at in Ayot St Lawrence.

Living in Cleethorpes were very lucky to have a number of great fish and chip shops available to us but I can hand on heart say that this was some of the best fish and chips ive ever had.

Great food, great company, great atmosphere and all round great pub πŸ‘ŒπŸΌ

🐟 One Pan Mediteranean Roasted Seabass 🐟

If you're looking for an easy mid week dinner that tastes like it took alot more effort than it did, then this is the one for you.
Everything cooks in one tray, takes less than 30 minutes, and is packed with flavour.

What i love most about this recipe is that the amounts really arent too important. Ive put amounts here because people like to know exact amounts but the beauty of this is that you can just use a good splash/sprinkle of all the ingredients on here.

Ingredients:

β€’ 2 sea bass fillets
β€’ 1 onions, sliced
β€’ 250g of cherry tomatoes, halved (I use vine on)
β€’ 1 tbsp olive oil
β€’ 1 tbsp balsamic vinegar
β€’ 1 tsp mixed herbs
β€’ Salt & black pepper

For the sea bass:

β€’ 1 tsp paprika
β€’ 1 tsp garlic granules
β€’ Pinch of chilli flakes (More or less depending on your taste)
β€’ 1 tbsp honey
β€’ Juice of Β½ lemon
β€’ 1 tbsp light soy sauce
β€’ K**b of butter
β€’ 1 sprig fresh rosemary

Method:

Preheat your oven to 200Β°C (180Β°C fan).

Add the sliced onions and cherry tomatoes to a roasting dish. Drizzle with olive oil and balsamic vinegar, then season with mixed herbs, salt and pepper.

Place the sea bass fillets on top of the vegetables.

Sprinkle over the paprika, garlic granules and chilli flakes. Drizzle with the honey, lemon juice and soy sauce.

Add a k**b of butter and lay the rosemary over each of the fillets.

Roast for 15–20 minutes until the fish is cooked through and flakes easily with a fork.

Serve with new potatoes, crusty bread, rice or a simple salad. When i make this dish I like to make Greek fries by simply adding a good drizzle of olive oil, some garlic salt, a squeeze of lemon and plenty of oregano. Perfecto πŸ€ŒπŸΌπŸ’ƒ

Fresh fish doesn't need to be complicated. Simple ingredients, one tray and dinner is sorted.

This is my take on kedgeree and for me its a winner.

Smoked Haddock Kedgeree on a mango curry hummous!

Serves 3/4

INGREDIENTS

For the mango curry hummus Base
- 250g hummus
- Juice of Β½ lemon
- 1 tsp curry paste ( i used madras paste)
- 2 tsp mango chutney

For the Kedgeree
- 400g smoked haddock
- 400g cooked basmati rice
- 6 eggs
- 1 onion finely sliced
- 200g mushrooms, sliced
- 1 red chilli, diced
- 1 red chilli, sliced.
- 1 tbsp curry paste
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp fresh coriander, chopped
- Black pepper
- Lemon wedges to serve
- 2 Bay leaves (optional)
- Pinch of peppercorns (optional)

METHOD

1. Make the mango curry Hummus

In a bowl mix together:
- hummus
- lemon juice
- curry paste
- mango chutney
- drizzle of olive oil

Stir until smooth and creamy.

Set aside.

2. Cook the Eggs

Bring a saucepan of water to the boil.

Carefully lower in the eggs and cook for:
- 7 minutes for slightly soft yolks
- 8–9 minutes for firmer yolks

3. Cool under iced cold water, peel and halve.

4. Poach the Smoked Haddock

Place the smoked haddock into a shallow pan.

Cover with:
- half milk
- half water

Add the two bay leaves and the pinch of peppercorns if youre using them.

Bring gently to a very light simmer and poach for 4–5 minutes until the fish flakes easily. 6 minutes if its thick.

Remove carefully and break into large chunks making sure to discard the skin

Reserve a little of the poaching liquid.

5. Make the Kedgeree

Heat the butter and olive oil in a large frying pan.

Add the onions and diced red chilli and cook until they soften.

Add the mushrooms and cook until golden

Stir in the curry paste

Cook for anothrr minute or 2 until fragrant.

Add the rice and toss everything together.

Fold through:
- smoked haddock
- chopped coriander

If needed, add a splash of the poaching liquid to loosen everything and add extra smoky flavour.

Season with black pepper.

TO SERVE

Spread the hummus across the base of each plate.

Spoon the hot smoked haddock kedgeree over the top.

Finish with:
- halved eggs
- extra coriander
- sliced chilli
- drizzle of olive oil
- squeeze of lemon
- little dabs of mango chutney

Serve immediately while warm
