π One Pan Mediteranean Roasted Seabass π
If you're looking for an easy mid week dinner that tastes like it took alot more effort than it did, then this is the one for you.
Everything cooks in one tray, takes less than 30 minutes, and is packed with flavour.
What i love most about this recipe is that the amounts really arent too important. Ive put amounts here because people like to know exact amounts but the beauty of this is that you can just use a good splash/sprinkle of all the ingredients on here.
Ingredients:
β’ 2 sea bass fillets
β’ 1 onions, sliced
β’ 250g of cherry tomatoes, halved (I use vine on)
β’ 1 tbsp olive oil
β’ 1 tbsp balsamic vinegar
β’ 1 tsp mixed herbs
β’ Salt & black pepper
For the sea bass:
β’ 1 tsp paprika
β’ 1 tsp garlic granules
β’ Pinch of chilli flakes (More or less depending on your taste)
β’ 1 tbsp honey
β’ Juice of Β½ lemon
β’ 1 tbsp light soy sauce
β’ K**b of butter
β’ 1 sprig fresh rosemary
Method:
Preheat your oven to 200Β°C (180Β°C fan).
Add the sliced onions and cherry tomatoes to a roasting dish. Drizzle with olive oil and balsamic vinegar, then season with mixed herbs, salt and pepper.
Place the sea bass fillets on top of the vegetables.
Sprinkle over the paprika, garlic granules and chilli flakes. Drizzle with the honey, lemon juice and soy sauce.
Add a k**b of butter and lay the rosemary over each of the fillets.
Roast for 15β20 minutes until the fish is cooked through and flakes easily with a fork.
Serve with new potatoes, crusty bread, rice or a simple salad. When i make this dish I like to make Greek fries by simply adding a good drizzle of olive oil, some garlic salt, a squeeze of lemon and plenty of oregano. Perfecto π€πΌπ
Fresh fish doesn't need to be complicated. Simple ingredients, one tray and dinner is sorted.
