Wildflower Meadow Belted Galloway Beef – From my Village to Your Table
I’m proud to offer something truly special: exclusive Belted Galloway beef raised on wildflower meadows in the very village I call home.
These cattle are slow-reared with care, grazing naturally among diverse grasses and flowers that give the beef its exceptional depth of flavour.
I then intensify this incredible flavour through the carefully controlled process of dry-ageing. In the same way that you would reduce a stock for a richer taste, the process draws out just the right amount of moisture over a 30-60 day period, to ensure that each cut delivers richness, tenderness, and character you simply can’t rush.
The butchery is just as important as the dry-ageing and I have taken time to research traditional, as well as new methods of butchery, to ensure that every piece of this very special beef is given its opportunity to shine. It’s vital to me that nothing is wasted and my customers are delighted to see cuts that have disappeared from many high street butchers.
I also frequently visit Field Irish Farm, where the cattle are reared without unnecessary chemicals or bought-in feed, following traditional, low-input, pre-war farming methods that have been passed down through the family. It’s a way of farming rooted in respect for the land, the animals, and the future.
Buying this beef does more than put outstanding meat on your plate. It directly supports the ongoing ecological work on the farm, home to several rare plants and fungi of National importance.
