Wessex Mill is an artisan flour milled in the heart of the beautiful North Wessex Downs. A family-owned brand, its milling history in Wessex goes back more than 100 years. Sourcing grain grown close to the mill to support local farmers and reduce food miles is very important to us. We are proud to use only the best local wheat for all our core bread and culinary flours procured direct from farmers

we know and trust. The grain variety and farmer is printed on our flour bags giving real transparency. Once we receive the grain onto site, we mill it slower and in smaller batches than larger mills, which we believe allows us to deliver fantastic quality flour that performs consistently, again and again. This World Environment Day, we're celebrating the people at the heart of every bag of Wessex Mill flour - our local British farmers.

For generations, we've worked closely with farmers located within 50 miles of our mill, building lasting relationships and supporting British agriculture. By sourcing locally, we know exactly where our grain comes from, helping us maintain the quality, traceability and provenance.

It's a simple approach that not only supports local farming communities but also helps reduce food miles and keeps our connection to the land firmly rooted in the countryside.

Today marks 𝑺𝒕𝒐𝒑 𝑭𝒐𝒐𝒅 𝑾𝒂𝒔𝒕𝒆 𝑫𝒂𝒚 - a gentle reminder that the most meaningful baking begins with valuing every ingredient we bring into our kitchens.

At Wessex Mill, we’re proud to work closely with local farmers across the North Wessex Downs, where every grain is grown with care. So, it only feels right to make the very most of it.

A few simple ways to waste less and bake more:
• Plan your bakes for the week and shop with purpose
• Use up what you already have - that last bit of flour can become something wonderful
• Freeze leftover bakes or dough for another day
• Don’t discard imperfect fruit & veg - they’re perfect for cakes, muffins and crumbles
• Get creative with leftovers - stale bread becomes puddings, crumbs or coatings

Classic Iced Finger Buns 🤍✨

Soft, fluffy and finished with a sweet icing glaze - our NEW Classic Iced Finger Buns are a true bakery favourite, perfect for afternoon tea or a nostalgic treat at home.

Made using our trusted flours and simple store-cupboard ingredients, these buns are a joy to bake and even better to share.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
50g butter
150g milk
150g Wessex Mill Strong White Bread Flour
2 tbsp sugar
1 tsp quick yeast
125g Wessex Mill Self Raising White Flour
150g icing sugar
2 tbsp water
2 tsp oil
oil for tray

𝐌𝐞𝐭𝐡𝐨𝐝
1. Melt the butter, remove from the heat and add the milk.
2. Put the strong flour, sugar and yeast into a mixing bowl, stir to combine, then add the milky mixture and mix into a smooth batter.
3. Cover and leave in a warm place until starting to bubble (about 2–3 hours). Lightly oil an oven tray.
4. Add the self raising flour to the batter, stir into a dough and knead for 100 presses.
5. Divide into 8 pieces, roll into 15cm sausages and place on the tray, leaving space between each.
6. Cover and leave to rise in a warm place for 30 minutes.
7. Preheat the oven and bake for 15 minutes.
8. For the icing, mix the icing sugar, water and oil into a smooth paste.
9. Once the buns are cold, spread with icing and leave to set.

Oven: 200°C / Fan 180°C / Gas 6
Bake time: 15 minutes
