Lishmans Of Ilkley Lishmans is a traditional butcher in Ilkley and a very popular destination for food fanatics. Lishmans are the proud creators of the official Yorkshire Sausage.

Established in 1986, Lishman's of Ilkley in Yorkshire is one of the best-known butchers in both county and country, with a pedigree and reputation synonymous with total quality. I have twice been awarded the national title of Champion Sausage Maker and am very passionate about the good, honest sausage. After 4 months of county-wide public tastings we unveiled Yorkshire’s official signature sausage

: a slightly peppery sausage containing parsley and traditional spices. We have released the official recipe to fellow butchers and many are now producing their own Yorkshire sausages according to our recipe.

Last month we travelled down to London to attend the Q Guild Smithfield Awards.

We were honoured to come home with not one, but two diamond awards - for our Dry Cured Streaky Bacon and our Game and Red Wine Pie. We were also awarded gold for our Heritage Breed Rib Eye Steak, Pork Pie, Beech Smoked Chicken and Thick Champion Pork Sausage.

The judges feedback has arrived and we’re really chuffed to see both the streaky bacon and the rib eye steak scoring a perfect 70/70.

As one of the most well respected butchery accolades we were extremely pleased to return back to Ilkley with so many awards.

Sometimes on a Tuesday morning at 8am we taste test.

David has been cooking up Brawn and the team decided to put it to the test (some more willing than others).

Made from pigs head and trotters, the pigs head is brined and then simmered until tender with spices and veg. The meat is then shredded, put into a dish and covered with the gelatinous cooking stock.

We’re over the moon to have won at the Great Taste Awards with our British charcuterie! 🏆🇬🇧

Two of our handcrafted products were recognised this year, and we couldn’t be prouder.

Here’s Sean in the shop with the award-winning packs – he slices and packs every one by hand with care and attention to detail 💪

🌶 Our Nduja picked up a 2* award – fiery, rich, and spreadable, this salami is one of our boldest flavours. Judges said:
“We applaud the simple, short list of ingredients” and
“Balanced with herbal notes that add interest – a well-created and enjoyable product.”

🍖 Our Air-Dried York Ham was awarded 1* – a cured ham we love pairing with runny cheese and pickles. Judges described it as:
“Pleasing texture and ultimately a great tasting ham.”
