Kent after all is the Garden of the England and in the present day this acclaim can often be overlooked. p, raised beds were put in place, a large greenhouse was built, and our garden became an allotment. I went foraging collecting wild fruit from hedgerows and trees that surround my Village in New Ash Green then turning this freshly picked produce into preserves and chutneys. Family, friends and in fact anyone I knew became my tasters and testers and with their encouragement Village on the Hill arrived. All my recipes are written and created solely by myself; I take my inspiration from researching British food history as far back as the 16th century, then writing and adapting the recipes for today using only seasonal fruit and vegetables, made in small batches of eight to twelve jars to maintain their quality and taste using a traditional style open pan. I produce my stock through the seasons, as you can probably gather I will not make Strawberry jam in December so once each type of what I make is gone it will not be available until the following yearly season.
