Smoky chorizo cod & crispy potatoes
Serves 2
Cod fillets (2pcs)
Cayenne pepper (0.5tsp)
Shredded kale (120g)
smoked paprika (2tsp)
Mayonnaise (25ml)
Diced chorizo (100g)
Garlic clove
Red pepper
Lime
Red onion x2
White potato x4
Preheat oven 200’c fan
Chop potatoes with skin on for extra fibre
Add to baking tray with half the paprika & cayenne pepper, drizzle with olive oil & pop in oven for 10 mins
Peel & chop red onion into wedges, chop pepper into bite size pieces, add to potatoes, give a good mix up and return to oven for 15 mins.
Add the cod to a bowl with the remaining paprika & cayenne pepper with a drizzle of olive oil & let marinate.
Peel & chop garlic & add to a bowl with the mayo & juice of half a lime… this is your aioli
Heat a frying pan with a drizzle of olive oil, once hot add the smoky cod & diced chorizo… cook for 5-7 mins
Heat a separate pan with a drizzle of olive oil & add the shredded kale with a pinch of salt for 5 mins
Serve the potatoes, onions & pepper over the kale & top with the smoky cod & chorizo & drizzle with the aioli
