🥞 自家製銅鑼燒|免煮豆沙超方便版本

鬆軟蜂蜜餅+幼滑紅豆餡💛
簡單材料,在家都可以做到日式甜品~

🍯 鬆餅材料
雞蛋 2隻
砂糖 15g
蜂蜜 15g
低筋麵粉 95g
泡打粉 3g
牛奶 40g
奶粉 10g
植物油 15g

🥣 做法
1. 雞蛋+砂糖+蜂蜜+植物油打至均勻
2. 篩入低筋麵粉,奶粉同泡打粉,輕輕拌勻至無粉粒
3. 麵糊靜置約30分鐘
4. 平底鑊用細火加熱,倒入麵糊煎至表面出現氣泡
5. 反面再煎至金黃色,放涼備用

✨ 組合
👉 使用 KOKUBU Hokkaido koshi an red bean paste
👉 取一塊鬆餅,加適量紅豆餡,再蓋上另一塊

💡 小貼士
- 全程用細火,顏色會更均勻
- 麵糊份量一致,成品會更整齊

🥞 Homemade Dorayaki (Easy Version)

Soft honey pancakes with smooth red bean filling 💛
A simple Japanese dessert you can make at home!

🍯 Ingredients
2 eggs
15g sugar
15g honey
95g cake flour
3g baking powder
40g milk
Vegetable oil 15g
Milk powder 10g


🥣 Method
1️⃣ Whisk vegetable oil, eggs, sugar and honey together
2️⃣ Sift in flour, milk powder and baking powder, mix until smooth
3️⃣ Let the batter rest for 30 minutes
4️⃣ Cook on low heat until bubbles form, then flip
5️⃣ Cook the other side until golden and let cool

✨ Assemble
👉 Use Kokubu Hokkaido koshi an red bean paste
👉 Spread filling between two pancakes

💡 Tips
- Low heat gives an even golden colour
- Keep portions even for neat sandwiches
- Wrap to keep soft for the next day

✨自家製爆漿流沙包

外皮鬆軟入面係鹹蛋黃奶香流沙,熱辣辣真係正🔥

🧾 材料(10–12個)

流沙餡:
•鹹蛋黃 80g
•牛油 60g
•糖粉 50g
•奶粉 40g
•淡奶 40ml
•吉士粉 20g

外層面包:

•中筋麵粉 250g
•糖 30g
•乾酵母 3g
•牛奶 130ml
•油 10g

👨‍🍳 做法重點

1️⃣ 流沙餡拌勻 → 分15–18g → 冷凍至硬
2️⃣ 麵團揉至光滑 → 發酵至2倍大
3️⃣ 分團 → 鬆弛10–15分鐘
4️⃣ 包入凍餡 → 收口向下
5️⃣ 二次發酵30–40分鐘
6️⃣ 水滾後蒸 8分鐘 → 焗2分鐘先開蓋

💡 Tips

• 餡一定要凍硬先包,可以前一晚整好放冰格
• 包好後輕輕滾圓 會更白滑

🧾 Ingredients (10–12 buns)

Filling:
• Salted egg yolk 80g
• Butter 60g
• Icing sugar 50g
• Milk powder 40g
• Evaporated milk 40ml
• Custard powder 20g

Dough:
• Plain flour 250g
• Sugar 30g
• Instant yeast 3g
• Milk 130ml
• Oil 10g

👨‍🍳 Key Steps

1️⃣ Mix filling → portion (15g - 20g each)→ freeze until firm
2️⃣ Knead dough until smooth → proof until doubled
3️⃣ Divide → rest 10–15 mins
4️⃣ Wrap frozen filling → seal well
5️⃣ Second proof 30–40 mins
6️⃣ Steam 8 mins (after water boils) → rest 2 mins before opening lid

💡 Tips

• Freeze filling completely
• Don’t over-steam (or no lava!)
• Roll buns smooth before proofing for a better finish
