Recipe of the week! ⬇️

🍽️ Chilli non Carne

Serves 6-8

🫘 Ingredients
• 3–4 tbsp olive oil
• 1 large red onion (or 2 small), diced
• 6 cloves garlic, crushed
• 1 red chilli, deseeded and finely chopped
• 1½ tsp chilli powder
• 1½ tsp smoked paprika
• 1 tbsp cumin
• 2 tsp oregano
• 180 ml red wine (optional)
• 400 g tin chopped tomatoes
• 500 ml vegetable stock
• 480 g cooked kidney beans (or 2 tins, drained)
• 240 g black beans (or 2 tins, drained)
• 3 tbsp raw cacao
• 2 large (or 4 small) bay leaves
• 2 tbsp tamari
• 1–1½ tsp Maldon salt
• Juice of 1–1½ limes
• 1 tsp apple cider vinegar
• 120 g sunflower mince
• 4 tbsp yellow maize flour (optional)
• Large handful fresh coriander, finely chopped



🥄 Method
1. Heat a heavy-based pan over medium heat. Add the olive oil, then the onion. Cook until soft and beginning to caramelise.
2. Add the garlic and fresh chilli. Cook for 2 minutes, until fragrant.
3. Stir in the chilli powder, cumin, and oregano. Cook for about 30 seconds to release the flavours.
4. Add the red wine a splash at a time, deglazing the pan as you go (or use hot water if not using wine).
5. Pour in the chopped tomatoes and vegetable stock. Stir well and bring to a gentle simmer.
6. Add the cacao, bay leaves, tamari, and salt. Stir to combine.
7. Add the kidney and black beans. Simmer gently for 45 minutes, stirring occasionally.
8. Stir in the sunflower mince and an additional 250 ml water. Simmer for a further 15 minutes, adding more water if needed.
9. Add the lime juice and apple cider vinegar. Stir in the maize flour (if using) and most of the chopped coriander.
10. Cook for a final 5–10 minutes until thickened and rich. Adjust seasoning if needed.
11. Serve hot, garnished with the remaining coriander.

Let’s talk coffee ☕️

🫘 How to soak & cook dried beans 🫘

Perfect for batch cooking & freezing!

1. Place your dried beans in a large pot and add 1 heaped tsp of bicarbonate of soda. Cover completely with cold water and leave to soak for 8–12 hours (overnight works best). This helps the beans cook faster and more evenly.

2. Discard the soaking water and rinse the beans thoroughly under fresh running water.

3. Return the beans back to the large pot with a lid and cover with fresh water, about 2–3 inches above the beans. Optionally, add a sheet of kombu, this can aid digestion, adds a subtle umami flavour, and provides a small amount of iodine!

4. Bring the beans to a boil, then reduce to a gentle simmer. Cook with the lid slightly ajar. If foam rises to the surface, skim it off for a cleaner taste.

5. Simmer until the beans are tender, typically 45 minutes to 1½ hours depending on the variety. Larger beans, such as butter beans, may take longer.

6. Add a large pinch of salt towards the end of cooking, as adding it too early can sometimes toughen the skins.



🫘 For Freezing (your time-saving step)

• Allow the beans to cool completely and remove kombu if used.
• Portion into containers or reusable freezer bags (approx. 240g is roughly one standard tin)
• Freeze for up to 3 months



🫘 Notes

Not sure if your beans are fully cooked? (especially kidney beans, which can make you unwell if undercooked).

To check, press a bean between your fingers. When properly cooked, it should mash very easily, with a soft, creamy centre and no firmness or chalky texture remaining.
