🕒 The 8-Minute Egg Cup (at 190°C)
This method gives you a perfect baked result in minutes, using either an egg cup holder or small ramekins in the air fryer basket.
🛒 You Will Need:
2 Country Lane Foods eggs 🥚
Non-stick cooking spray or butter 🧈
Diced bell peppers (red, yellow) 🫑
Red onion, finely diced 🧅
Small handful of spinach 🌿
Halved cherry tomatoes 🍅
Salt & pepper (to taste)
Optional: Sourdough for toast soldiers 🍞
📖 Quick Steps:
Prep: Lightly grease two ramekins or egg cups and add a tablespoon of the diced vegetables to the bottom. Place them in the air fryer basket. Pre-heat at 190°C.
Crack: Carefully crack one egg on top of the vegetables in each cup. Add the spinach, halved tomatoes, and a pinch of salt and pepper.
Cook: Set your air fryer to 190°C and cook:
6-7 Minutes: For a softer, slightly runny yolk.
8-10 Minutes: For a fully set, firm egg.
Serve: Carefully remove the cups and enjoy with a side of buttery sourdough toast soldiers!
