🧅 Time to make homemade pickled onions! 🧅
There’s something very satisfying about making your own pickled onions — and this is the perfect time of year to get a jar or two tucked away for the months ahead.
Pickling onions are small, thin-skinned onions that are sweeter and milder than their full-sized cousins. Once pickled, they become wonderfully crisp, tangy and full of flavour — perfect alongside a ploughman’s, cold meats, cheese or a good homemade pie. 🧀🥧
A simple traditional method:
🧅 Peel the onions and place them in a bowl. Sprinkle generously with salt, cover and leave overnight.
💧 The next day, rinse the onions thoroughly and pat them dry.
🥒 Pack the onions into clean, sterilised jars, adding a few peppercorns, mustard seeds and a bay leaf if you fancy.
🍶 Heat your pickling vinegar with a little sugar and your choice of spices, then allow it to cool slightly.
Pour the vinegar over the onions, making sure they are completely covered. Seal the jars and leave them somewhere cool and dark for at least 4–6 weeks before opening.
